Cheesecake Stuffed Strawberries


I’m always looking for options to make a quick and easy low-carb/keto dessert but unfortunately, finding any at supermarkets are few and far between.

After much exploring and time spent strolling the aisles,  I’ve come to terms that if you want to enjoy desserts while being low-carb/keto, you’ll need to make them yourself.  So that’s how this Cheesecake Stuffed Strawberries recipe was born!

This recipe is perfect for someone that just wants to whip up a quick dessert because who really wants to spend hours baking in  the kitchen when their sweet tooth hits?

These cheesecake stuffed strawberries require no baking and takes very little prep to put together!

The cheesecake filling consists of only three ingredients–Cream cheese, monkfruit, and vanilla extract.  Whip it all up and viola.  I mean, can a keto low carb dessert get any easier than that?

Also, if you are counting macros and need that little bit of extra fat in your day, these cheesecake stuffed strawberries will definitely help you out.

For presentation purposes, I stuffed the strawberries and put a couple of low-carb/keto sweetened chocolate chips on top, but you can also just use the cheesecake mix to dip your strawberries in!

Better yet, mix some chocolate chips into the cheesecake mix and have yourself a chocolate chip cheesecake dip!  However you choose to enjoy this dessert, you won’t be disappointed!

For this one, the only unique ingredient you will need is Swerve/Monkfruit, both can be purchased on Amazon or local specialty market.

Servings 6-8 Pieces

Ingredients

  • 6-8 Medium to Large Size Strawberries
  • 4 oz Cream Cheese
  • 2 tbsp Swerve/Monkfruit
  • 1/2 tsp Vanilla Extract

Directions

1) Gather all the ingredients.

2) Cut stems off strawberries then cut around the inside of the strawberry hollowing out slightly.  If the strawberries are large enough you can also use a melon baller.

3) Cut off the tip of strawberry so there’s a flat base for the strawberries to stand on and transfer to a flat plate

4) In a medium mixing bowl, add cream cheese, Swerve/Monkfruit, and vanilla extract.  Using a standing or an electric handheld mixer, beat cream cheese mixture until slightly fluffy approximately 2 minutes.

5) Using a ziplock bag (or pastry bag), fill the cream cheese mixture and cut one of the bottom corners off with scissors.

6) Fill each strawberry with the cream cheese mixture and place onto serving plate.  Enjoy!
