Bacon & Ham Cheddar Cups

Although I love my fair share of Asian food, I was also born and raised in Los Angeles, which means, every so often I will crave a really good sandwich.  That is where I came up with this idea of doing a sandwich in a cup.  But not just any cup, a melted cheddar cup.  Guys…let me tell you this is really good…and I mean REALLY GOOD!  You get all the flavors and textures of a sandwich and you don’t even miss the bread.  In fact, it is better than any sandwich I have ever had!

You can eat this using a fork and break pieces of the cheese bowl off as you go or if you’re like us, you can just pick up the entire thing, fold it and eat it like a taco.  Either way, you can’t go wrong.

For this recipe, the only special ingredients you would need is Kewpie mayo, which you can pick up on Amazon or a local Asian supermarket.  You can use American mayo like Hellman’s or Best Foods, however the recipe will be less creamy and sweet.

Net Carb/Cup ~1g

Servings 2 Cups

Ingredients

  • 2/3 cup Shredded Cheddar
  • 2 Slices of Bacon
  • 2 Slice of Deli Ham/Turkey
  • 1 Cup Shredded Lettuce
  • 2 Cherry Tomatoes
  • 2 tbsp Kewpie Mayo

Directions

1) Gather all the ingredients.

2) Heat oven to 425F.

3) Line a baking sheet with a Silpat baking mat (parchment paper works too).  Place 1/3 cup of cheddar on the Silpat baking mat to form a circle roughly 4-5 inches in diameter. Repeat with the other 1/3 cup of cheddar to make a total of two cheddar circles.

4) Bake for 6-8 minutes until cheese is bubbling and edges have slightly began to brown.

5) Meanwhile, cut bacon into small slices and cook over medium heat until crispy.  Drain on paper towel and set aside.

6) With a knife or a slicer, shred lettuce and set aside.

7) Next, slice ham into thin slices.

8) Take tomatoes cut them in quarters.

9) When cheese is bubbling and edges are slightly brown, take it out of the oven and let cool slightly.

10) While still very warm (about 1-2 minutes), place the cheese over the bottom of an upside down glass tumbler and shape into a bowl.  Leave to cool completely.

11) Place shredded lettuce, ham, bacon, tomatoes in cheese cup and drizzle with Kewpie mayo.

12) Eat it with a fork or pick it up like a taco.  Either way it’s delicious!
