Bacon & Ham Cheddar Cups


Although I love my fair share of Asian food, I was also born and raised in SoCal, which means, every so often I’ll crave a really good sandwich!   But since being low-carb/keto, I haven’t even attempted to find a replacement until now with these Bacon & Ham Cheddar Cups!

These cheddar cups are like a sandwich in a cup.  But not just any cup, a melted cheddar cheese cup and it doesn’t much better than that!

Guys…let me tell you this is really good…and I mean REALLY GOOD!  You get all the flavors and textures of a sandwich and you don’t even miss the bread.  In fact, it’s better than any sandwich I have ever had!

And although the cheddar cheese shells look like it might be difficult to make, it’s really easy!  All you need to do is melt some cheese in the oven and once it’s still warm, you throw it over some glass tumblers and let gravity do its thang!  A couple of minutes later, you have yourself a perfectly shaped cheddar cheese bowl!

From there, like any sandwich, you can add whatever you like in there.  We stuck with basics of a BLT with a squeeze of Kewpie Mayo and it came out just awesome!

You can eat this using a fork and break pieces of the cheese bowl off as you go or if you’re like us, you can just pick up the entire thing, fold it and eat it like a taco.  Either way, you can’t go wrong.

For this recipe, the only special ingredients you would need is Kewpie Mayo, which you can pick up on Amazon or a local Asian supermarket.  You can use American mayo like Hellman’s or Best Foods, however the recipe will be less creamy and sweet.

Now, let’s get started!

Net Carb/Cup ~1g

Servings 2 Cups

Ingredients

  • 2/3 cup Shredded Cheddar
  • 2 Slices of Bacon
  • 2 Slice of Deli Ham/Turkey
  • 1 Cup Shredded Lettuce
  • 2 Cherry Tomatoes
  • 2 tbsp Kewpie Mayo

Directions

1) Gather all the ingredients.

2) Heat oven to 425F.

3) Line a baking sheet with a Silpat baking mat (parchment paper works too).  Place 1/3 cup of cheddar on the Silpat baking mat to form a circle roughly 4-5 inches in diameter. Repeat with the other 1/3 cup of cheddar to make a total of two cheddar circles.  Bake for 6-8 minutes until cheese is bubbling and edges have slightly began to brown.

4) Meanwhile, cut bacon into small slices and cook over medium heat until crispy.  Drain on a paper towel and set aside.

5) With a knife or a slicer, shred lettuce, slice ham, cut tomatoes in quarters and set aside.

6) When cheese is bubbling and edges are slightly brown, take it out of the oven and let them cool for 1-2 minutes.  Then place the cheese over the bottom of an upside down glass tumbler so it takes the shape of a bowl.  Leave to cool completely for 3-4 minutes.

7) Once cooled, place shredded lettuce, ham, bacon, tomatoes in cheese cup and drizzle with Kewpie Mayo.  Eat it with a fork or pick it up like a taco.  Either way it’s delicious!
