Bacon, Asparagus, Shishito Pepper Stir Fry


Before the kids came along, one of the fondest memories I have is traveling throughout Japan eating at different Izakayas with the ‘Mrs’!  For those of you unfamiliar with the term, ‘Izakaya’, it’s like a Japanese pub that serves alcohol and small dishes.

The focus is usually enjoying a nice cold beer while snacking on various appetizers that pair well with beer/alcoholic drinks, and of course just enjoying each others company!

It was at one of those Izakayas in Japan where I ordered this Bacon, Asparagus, Shishito Pepper Stir Fry dish and was amazed at how awesome it tasted!  It was cooked in a light garlicky yakitori flavored sauce and I knew I had to create it once I got back to the States. 

So although it’s been over 10 years since we first created this recipe, we’ll be releasing the low-carb/keto version of it today here on LCA!

This recipe uses shishito pepper, which is a type of pepper found in East Asia.  If you’ve never had it before, they’re like little bell peppers with very thin skin.

Now, here is the interesting part about them, most of the peppers aren’t spicy, but there’s about a 1 to 20 chance that you will hit the spicy pepper jackpot and you probably can imagine how this could lead to some entertaining drinking games!! 

Aside from that, they’re loaded with Vitamin C and high in fibers, which means a lower net carb count and helps this dish come in at ~4g for the entire plate!

The special ingredients needed for this recipe are Swerve/Monkfruit, Bonito Flakes, Soy Sauce, Japanese Sake and optional Toasted Sesame Seeds.  All these can be picked up on Amazon (aside from Japanese sake) or a local Asian Supermarket.  The shishito pepper should be available at supermarkets, if not Trader Joe’s.

Directions

1) Gather all the ingredients.

2) Finely dice garlic and set aside.

3) In a stove top pot, add all the ingredients for the marinate – Soy Sauce, Japanese Sake, Water, Swerve/Monkfruit, Bonito Flakes, and Diced Garlic – and bring to boil.  Once boiling, reduce to simmer heat and let sauce reduce for 7-10 minutes or until slightly reduced.  Once reduced, strain sauce with strainer and make sure to squeeze/press any excess sauce from the bonito flakes.  Set aside.

4) In the meantime, cut bacon into 1 inch lengths and set aside.

5) Wash and cut asparagus and shishito peppers in to 1 inch lengths and set aside.  Note – you can keep shishito whole if you prefer.

6) Once sauce is ready from step 3), place a large Teflon fry pan on medium heat and add bacon.  Cook bacon until preferred liking (about 3 minutes for medium and 6 minutes for extra crispy) and transfer bacon to one holding bowl and the bacon oil into another holding bowl.

7) Now take about 1 tbsp of the bacon oil and place back onto large Teflon fry pan on high heat.  Discard the remaining bacon oil.  Once the oil start to smoke, add asparagus and shishito peppers.  Stir well and cook for 1.5-2 minutes until asparagus is tender.  Add back bacon and pour sauce over.  Mix well and cook for about 15 seconds to coat sauce.  Transfer to serving plate and sprinkle optional Toasted Sesame Seeds.  Enjoy!
