  • Chicken Breast – skinless and boneless chicken breast. Can also use chicken thighs.
  • Red Bell Pepper – sliced.
  • Onion yellow or brown onion sliced.
  • Celery – celery stalks chopped.
  • Neutral Oil no taste or flavor with high cooking temperature. Some choices are sunflower oil, peanut oil, sallower oil, vegetable oil, and canola oil.
  • Salt – sea salted preferred.
  • Black Pepper – ground.
  • Toasted Sesame Seeds – optional garnish.
  • Soy Sauce – low-sodium Soy Sauce preferred. Can also use tamari for gluten-free.
  • Oyster Sauce – a base sauce made from oyster extract. Can be found at most grocery stores.
  • Garlic Powder – ground dry powder.
  • Sweetener – use your preferred sweetener.  
  • Chicken Broth – full flavor chicken broth.

Step 1 In a mixing bowl, combine Soy Sauce, Oyster Sauce, black pepper, garlic powder, sweetener, and chicken broth. Ensure a thorough mix and set it aside.

Step 2 Next, prepare your cooking vessel, a deep large skillet or wok, and heat neutral cooking oil over high heat until it’s hot and lightly smoking. Add the cubed chicken, allowing it to sizzle for a minute.

  • Chop chicken breast into bite-size cubes, sprinkle salt and black pepper and set aside.

  • Slice red bell pepper, onions, and chop celery as shown below.

  • In a mixing bowl, combine Soy Sauce, Oyster Sauce, black pepper, garlic powder, sweetener, and chicken broth. Mix well and set aside.

  • In a deep frying pan or Wok, add neutral cooking oil and bring up to temp on high heat. Once up to temp and the oil is lightly smoking, add cubed chicken and cook for 1 minute.

  • After 1 minute, add red bell pepper, onions, and celery. Cook until chicken is cooked through, about 3-4 minutes.

  • Once chicken is cooked, add in the sauce. Combine well and then transfer to a serving plate. Top with optional Toasted Sesame Seeds and serve hot.
