Caramelized Onion n’ Jalapeno Cheese Dip

Our Keto Sour Cream Onion Garlic CrackDip is our go-to midnight snack.  Once our kids are asleep, we have a tendency to both flock into the kitchen and start eating anything in our fridge with that dip.  One of those nights, we were talking about how it would be great to make another dip that offered more of a savory profile and that inspired us to create this Caramelized Onion n’ Jalapeno Cheese Dip!  You can enjoy it with either pork rinds, your choice of vegetables, or anything else you find in your kitchen!

This dish is low-carb/keto friendly with ~3-5g of carbs per serving.  Since this is a dip, the serving sizes will vary on the individual.  The dip presents a very savory cheese profile with hints of sweet garlic and a kick of jalapeno at the finish.

For this recipe, everything can be picked up at a local supermarket!  The only optional items you would need are a grater and pork rinds.  You can elect to purchase pre-grated cheese if you want, however the dip will not be as smooth.

Ingredients

  • 1 Cup Diced Onion (about 1/4 of a large onion)
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/8 tsp Sprinkle of Salt
  • 2 Garlic Cloves
  • 1 Jalapeno
  • 8oz Block Cheese (we used Medium Cheddar)
  • 2/3 Cup Half & Half
  • Pork Rinds (optional)

Directions

1) Gather all the ingredients.

2) Finely dice onions.  You should end up with around 1 cup of loosely chopped onions.  Note – if you have a food processor, use it on this step.

3) In a medium Teflon fry pan, add olive oil and bring to heat.  Once heated, add chopped onions and cook on medium-low for 30 seconds.

4) After 30 seconds has passed, add 1 tbsp butter and lower heat to low.  Sprinkle salt and mix together.  Cook for 15 minutes to caramelize onions mixing occasionally.

5) In the meantime, finely chop garlic and jalapeno, set aside.  Note – if you have a food processor, you can use it on this step.

6) Grate the block of cheese with a grater and set aside.

7) Place stovetop pot on low heat and add 1 tbsp of butter.  Wait for butter to melt and add half and half.  Keep on low heat for about 2 minutes until half and half is warm.  Note – it is VERY important to do this on LOW HEAT, otherwise you will burn the cheese and get clumpy dip.

8) Low to simmer, add grated cheese and mix well until melted.  Keep on simmer.

9) After 15 minutes has passed for the caramelized onions, combine garlic and jalapeno into a medium Teflon fry pan.  Stir well and cook for 5 more minutes.

10) After 5 minutes, combine caramelized garlic onion jalapeno with melted cheese and transfer to serving bowl.

11) Serve with optional pork rinds or vegetables of your choice.  Once the dip starts to cool down, it will become slightly grainy so warm back up as needed.  Note – store in fridge and place into microwave for about 30-60 seconds to melt cheese.
