What are Cheddar Bay Biscuit Rolls?

These keto cheddar biscuits are a copycat of the famous red lobster biscuits. Made with almond flour, cream cheese, shredded cheddar cheese, and seasonings, they are a great low carb, keto-friendly, gluten-free, and sugar-free bread/roll alternative and very easy to make.

Just keep in mind that these keto red lobster biscuits are gluten-free that are made entirely out of cheese and almond flour, so they won’t achieve the same texture as bread made from gluten and wheat.

However, what you’ll get is a bread roll that’s slightly denser but full, and I mean full of amazing flavors, and will satisfy your carb cravings! Plus these rolls are dense, so they’re ultra filling and one little roll goes a long way!

What ingredients do I need and how do you make keto cheddar biscuits?

  • Almond Flour – finely sifted and blanched works best.
  • Baking Powder – used to help the cheese rolls rise.
  • Garlic Powder – used to enhance the flavor of the cheese bread rolls. Found in the spice section in supermarkets.
  • Chili Powder – use red pepper or cayenne pepper.
  • Old Bay Seasoning – a blend of different spices commonly used in seafood. Found in most supermarkets.
  • Shredded Cheddar Jack – any mixed cheddar with a mild cheese.
  • Cream Cheese – use block cream cheese not whipped.
  • Egg – beaten and used for egg wash.
  • Dried Parsley – optional for garnish.

Combine almond flour, baking powder, and seasonings in a bowl. In a separate bowl, microwave mozzarella and cream cheese in 15 second intervals until completely melted.

Add almond flour mixture and knead to form a dough. Work quickly forming the dough into balls, place on baking mat, brush with egg wash and bake for 15-17 minutes until rolls are firm and slightly golden brown.

Ingredients

  • 3/4 Cup Almond Flour
  • 1/2 tbsp Baking Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/4 tsp Bay Seasoning
  • 1 1/4 Cups Pre-Shredded Cheddar Jack (or any mixed cheddar with a mild cheese)
  • 2 oz Cream Cheese
  • 1 Egg (Egg Wash)
  • Dried Parsley (optional garnish)

Directions

1) Gather all ingredients.

2) Preheat oven to 350F and line baking sheet with silicone baking mat (parchment paper works as well).

3) Combine Almond Flour, Baking Powder, garlic powder, chili powder, Bay Seasoning and in a bowl.  Mix well and set aside.

4) In a different large microwavable bowl, add shredded cheddar jack and cream cheese.  Microwave for 15-30 seconds, take out and stir, then microwave for 15-30 more seconds and stir again. Continue this process until the cheese is completely melted.

5) Add the Almond Flour mixture into the cheese bowl while still warm, quickly knead with hands until dough like consistency and everything is fully combined.  If dough cools too much just microwave for a few seconds, take out and knead again.

6) Once combined, separate into 6 equal parts, form well packed buns and place onto a silicone baking mat.  Repeat until all the mix is used.

7) Beat egg in a bowl and gently brush onto buns (egg wash).

8) Bake for 15-17 minutes, until buns are firm and slightly golden brown.

9) Once done, add a light pinch optional parsley garnish and enjoy warm!
