Cheddar Bay Biscuit Rolls Top Down

Growing up, going to Red Lobster was such a treat especially being a seafood lover!  My first time trying their cheddar bay biscuits, I was hooked!

They were cheesy, buttery, with a herbaceous flavor that I never tasted before.

For obvious diet reasons, I have not had Red Lobster cheddar bay biscuits in a very long time so when we started making different types of low-carb/keto breads, I knew I had to try my hand in making one of my favorite biscuits.

After a few attempts of using different types of ingredients, I came up with this amazing keto low carb cheddar bay biscuit copycat!

Using a cheddar jack cheese mix and Almond Flour as a base, these biscuits are surprisingly super easy to make.  All it involves is melting shredded cheese and cream cheese, then mix in the Almond Flour, seasonings and bake.  That’s it!

So, if you’re a fan of Red Lobster cheddar bay biscuits and looking for a low-carb/keto alternative, try out this recipe for a delicious treat!

The special ingredients needed for this recipe are Almond Flour and Bay Seasoning.  All these can be picked up on Amazon or a local Supermarket.

Now if you’re ready, let’s get going!

Net Carb/Roll ~2.5g

Servings 6 Rolls

Ingredients

  • 3/4 Cup Almond Flour
  • 1/2 tbsp Baking Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/4 tsp Bay Seasoning
  • 1 1/4 Cups Pre-Shredded Cheddar Jack (or any mixed cheddar with a mild cheese)
  • 2 oz Cream Cheese
  • 1 Egg (Egg Wash)
  • Dried Parsley (optional garnish)

Directions

1) Gather all ingredients.

2) Preheat oven to 350F and line baking sheet with silicone baking mat (parchment paper works as well).

3) Combine Almond Flour, baking powder, garlic powder, chili powder, Bay Seasoning and in a bowl.  Mix well and set aside.

4) In a different large microwavable bowl, add shredded cheddar jack and cream cheese.  Microwave for 15-30 seconds, take out and stir, then microwave for 15-30 more seconds and stir again. Continue this process until the cheese is completely melted.

5) Add the Almond Flour mixture into the cheese bowl while still warm, quickly knead with hands until dough like consistency and everything is fully combined.  If dough cools too much just microwave for a few seconds, take out and knead again.

6) Once combined, separate into 6 equal parts, form well packed buns and place onto a silicone baking mat.  Repeat until all the mix is used.

7) Beat egg in a bowl and gently brush onto buns (egg wash).

8) Bake for 15-17 minutes, until buns are firm and slightly golden brown.

9) Once done, add a light pinch optional parsley garnish and enjoy warm!
