Cheesecake Stuffed Strawberry


I am always looking for new low-carb/keto friendly dessert options but unfortunately finding any at supermarkets are far and few between.  I have come to terms with the fact that if you want to enjoy desserts while being low-carb/keto, you need to make them yourself. 

But who has time to be spending hours baking in the kitchen? This is why I started making these cheesecake stuffed strawberries that require no baking and takes just a little prep to put together.

For presentation purposes, I stuffed them and put a couple stevia sweetened chocolate chips on top but you can also use the cheesecake mixture as a dip for the strawberries. 

Better yet, mix some chocolate chips in the bowl and you have yourself a chocolate chip cream cheese dip.  However you choose to eat it, you won’t be disappointed.  I promise!

For this one, the only unique ingredient you will need is Swerve/Monkfruit, both can be purchased on Amazon or local specialty market.

Now, let’s get started!

Net Carb/Serv ~1g

Servings 6-8 Pieces

Ingredients

  • 6-8 Medium to Large size Strawberries
  • 4 oz Cream Cheese
  • 2 tbsp Swerve/Monkfruit
  • 1/2 tsp Vanilla Extract

Directions

1) Gather all the ingredients.

2) Cut stems off strawberries.

3) Cut around the inside of the strawberry hollowing out slightly.  If the strawberries are large enough you can also use a melon baller.

4) Cut off time but off the tip of strawberry so there’s a flat base for the strawberries to stand on.

5) Place each strawberry on a flat plate.

6) In a medium mixing bowl, add cream cheese, Swerve/Monkfruit, and vanilla extract.

7) Using a standing or an electric handheld mixer, beat cream cheese mixture until slightly fluffy approximately 2 minutes.

8) Using a ziplock bag (pastry bag works too) fill the cream cheese mixture and cut one of the bottom corners off with scissors.

9) Fill each strawberry with the mixture, over-stuffing it a little.

10) Optional- place a couple stevia sweetened chocolate chips, blueberries, or your own creations on top and enjoy!  Short on time?  This recipe also works very well as a dip for strawberries or other low-carb/keto fruits.  Just serve the cheesecake mixture in a bowl and dip away.
