Chili and Lime Pan Fried Chicken

This easy chili lime chicken stir-fry topped with crumbled feta will be the easiest meal you make this week.  Packed with juicy chicken, bursting flavors of cayenne and tangy lime juice, it’s definitely deserving to be on your weekly dinner rotation!

My family and I love Mexican food and have it almost weekly.  One of their favorites is when we have fajitas!

Sometimes I will do slices of beef with veggies and other times I make chicken.  One night in particular, I decided to add a little more zest to the chicken and ended up with this chili lime chicken.

This is such an easy chicken recipe that I didn’t mind one bit when the next week my family requested the same chili lime chicken for fajita night.

Since me and the hubs are low carb, I decided to make extra and we ate the chili lime chicken as is and quickly realized this was a great stand alone stir fry recipe!

You can eat this chili lime chicken stir-fry as-is, with a side salad, or in a lettuce wrap with our Green Sauce.  Either way, I promise you will not be disappointed!

What is chili and lime seasoning?

Chili lime seasoning is lime with hot pepper.  You can of course purchase this seasoning in a bottle at many grocery stores however, we prefer making it from scratch with natural fresh ingredients.  So simple too.

Is chili and lime pan friend chicken gluten and keto friendly?

This chili and lime chicken stir-fry is absolutely keto, low carb friendly and gluten free so you can eat without worry about it affecting your specific diet.

What kind of chicken should I use for pan frying chili and lime chicken?

I always recommend chicken thighs because it’s much juicier than breast, but if you prefer white meat, you can substitute it as well.

What kind of high temp neutral cooking oil do you recommend for pan frying?

I like to use sunflower oil, peanut oil and safflower oil.  But you can use any type of high temp natural cooking oil you prefer.

For this recipe, you should be able to pick up everything you need at your local supermarket.

Now, let’s get making some Chili and Lime Pan Fried Chicken!

Ingredients

  • 1/2 lb Boneless and Skinless Chicken Thigh (about 2-3 pieces)
  • 5 Stems Cilantro
  • 1/2 Medium Red Bell Pepper
  • 1 tbsp High Temp Neutral Cooking Oil
  • 1/2 tsp Salt
  • 1/4 tsp Cayenne Pepper
  • 2 tbsp Lime Juice
  • 1 tbsp Crumbled Feta Cheese

 

Directions

1) Gather all the ingredients.

2) Loosely chop cilantro and set aside.

3) De-seed red bell pepper and slice as shown below.

4) Cut chicken into bite-size cubes as shown below.

5) In a large Teflon fry pan, add 1 tbsp of cooking oil and bring up to temp on high heat.  Once up to temp, reduce heat to medium, add in chicken, sprinkle in salt and cayenne pepper and cook for 2 minutes while occasionally stirring.

6) Add in sliced bell peppers and cook for 2-3 more minutes until chicken is browned.

7) Add in lime juice, cilantro, give it a quick mix and transfer to a serving plate.  Top with crumbled feta cheese and enjoy!
