Creamy Ground Beef Stew

This creamy hearty ground beef stew is a perfect cold weather meal that will satisfy your taste buds and warm your belly!

Anytime I find a recipe using ground beef, I’m immediately interested because if I have one protein in my freezer, it will always be frozen ground beef.

I buy my ground beef in bulk at my local Costco and then portion them out in freezer bags. This way, I can easily defrost and whenever I get inspired by a ground beef recipe!

This ground beef stew is my new favorite recipe using ground beef because not only does my family love it, but it’s also simple to make and tastes delicious no matter what you’re in the mood for!

What is ground beef stew?

Ground beef, mushrooms, carrots, broccoli and onions simmered in beef broth until tender, then mix with heavy cream to make a hearty and creamy stew that can work as a side soup or a main hearty meal. That’s all this stew is and all it needs!

How do you thicken ground beef stew with keto friendly ingredients?

I prefer to use a little xanthan gum to thicken up my soups.  It can be found online or at many grocery stores.

What other kinds of vegetables can I add into this ground beef stew?

For the sake of having too many carbs and starches in this recipe, I only used onions, minimal carrots, broccoli and mushrooms, but you can customize however you prefer.  Some other vegetables you can add are:

  • Green Peas
  • Green Ceans
  • Baby Corn (has very little carbs)
  • Edamame Beans

Any tips on making this creamy ground beef stew?

  • Add in heavy at the very end since heating can cause it to curdle.
  • This stew is great for meal prepping.  Freeze in containers or freezer bags and defrost for a quick meal.
  • The special ingredient needed for this recipe is only Xanthan Gum, which can be picked up on Amazon or a local Supermarket.

Ingredients

  • 1 lb Ground Beef
  • 1/4 Cup Chopped Onions
  • 1 Whole Carrot
  • 1/2 Cup Sliced Mushrooms
  • 2 Garlic Cloves
  • 1/2 Cup Broccoli Florets
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 Cups Beef Broth
  • 1/2 Cup Heavy Cream
  • 1 tbsp Butter
  • 1/4 tsp Xanthan Gum

Directions

1) Gather all the ingredients.

2) Chop onion, broccoli, carrot and slice mushrooms, garlic as shown below and set aside.

3) Heat large stove top pot on high heat and add in ground beef.  Sprinkle salt and black pepper, mix in with a spatula and cook until beef is browned, about 2 minutes.

4) Add chopped onion, carrots, sliced mushrooms and garlic.  Saute for 1-2 minutes on high heat.

5) Add in beef broth, bring to a boil, cover, reduce heat to low and cook for 15-20 minutes until vegetables are all softened.

6) Once vegetables are softened, add in chopped broccoli and cook for 2-3 minutes or until broccoli are softened to preferred tenderness.

7) The final step is to mix in butter, heavy cream and Xanthan Gum.  Continue to mix until Xanthan Gum is completely dissolved and soup is thickened.  Transfer to a serving bowl and enjoy warm!  Note – if you prefer a thicker stew, add in additional Xanthan Gum 1/16 tsp at a time.  A little goes a long way with Xanthan Gum.
