Feta Ground Beef Stuffed Bell Peppers

These delicious keto friendly stuffed bell peppers are filled with perfectly seasoned ground beef, feta, and pan fried onions.  They’re topped with a delicious mayo ketchup sauce giving it a big mac burger feel.  Not only are these so good and filling, but it’s also a perfect recipe for your next keto dinner!

Who doesn’t want all the delicious flavors of a big mac burger stuffed in a healthy bell pepper?  These taste too good to be healthy, yet they are!

Since I love bell peppers, I’m always looking for clever ways to stuff them so my entire family will eat them happily and I think I did just that by making them taste like a fast food burger!

This recipe makes me so happy I am feeding my family healthy wholesome food while not sacrificing flavor.

What are stuffed bell peppers?

Stuffed bell peppers are bell peppers that have been de-stemmed and hollowed out and stuffed.  In this recipe, we stuffed them with ground beef, feta, and onions.

Are stuffed bell peppers keto friendly?

Bell peppers are very keto friendly and low in carbs.  If you choose low carb ingredients for your stuffing, then you got yourself a delicious keto dish.

What kind of bell peppers should I use for this recipe?

I haven’t met a bell pepper that I didn’t stuff so I would say any type/color is good however, smaller ones may be more difficult to stuff.

What kind of ground beef should I use to make the stuffing?

I prefer my ground beef to be 80/20, but any type will work for this recipe.

What kind of sauce does this recipe call for?

The sauce is a simple mix of sugar-free ketchup and mayo.  You can also add a little sriracha or pepper in there to give it a little kick at the end!

For this recipe, the special ingredients you would need is Sugar Free Ketchup, which you can pick up on Amazon or at a local supermarket.

Now, let’s get making some Feta Ground Beef Stuffed Bell Peppers!

  • Prep Time 10M
  • Baking Time 25-35M
  • Total Time 35M

Ingredients

Bell Pepper Stuffing

  • 4 Bell Peppers
  • 1 lbs Ground Beef
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 2 tbsp Chopped Onions
  • 2 tbsp Crumbled Feta Cheese
  • 10-15 Stems Alfalfa Sprouts (optional)

Sauce

Directions

1) Gather all the ingredients.

2) Preheat oven to 350F.

3) Chop onions and set aside.

4) Cut the tops off the bell peppers, remove the seeds with a spoon and add bell peppers into a baking dish as shown below.   Note – The easiest way to do this is to cut the bell peppers about a half-inch from the top and gently pull the top off.

5) In a small mixing bowl, combine salt, black pepper, garlic powder and mix well.

6) In a large mixing bowl, add ground beef and combine half the seasoning and mix.  Once completed, combine the other half of the seasoning and mix.  Note – we add the seasoning in stages to ensure even distribution.

7) In a large Teflon frying pan, add seasoned ground beef and chopped onions over medium high heat, break apart the meat with a spatula and cook for 3 minutes or until browned.

8) Once the ground beef is cooked, add to a clean mixing bowl and combine well with feta cheese as shown below.

9) Stuff the ground beef mixture into the bell peppers from step 3).  Cover the baking dish with aluminum foil and bake in the oven for 25-35 minutes or until preferred bell pepper tenderness.

10) In the meantime, prepare the sauce by combining mayo and Sugar Free Ketchup.

11) Once bell peppers are done, apply a generous amount of sauce followed by a pinch of optional alfalfa sprouts.  Enjoy with a knife and fork!
