How to make Feta Ground Beef Stuffed Bell Peppers?


  1. Start by preparing the bell peppers but washing, cutting off the top half, and removing any seeds inside.
  2. Next, prepare the ground beef mixture by combing ground beef, salt, black pepper, and garlic powder in a mixing bowl.
  3. In a large skillet or saucepan, stir in ground beef mixture along with chopped onions and sauté for 3 minutes until the beef is lightly browned.
  4. Transfer the beef mixture into a mixing bowl and mix in crumbled feta cheese.
  5. Stuff the ground beef mixture into the prepared bell peppers, transfer the bell peppers into a baking dish, and bake at 350F for 25-35 minutes.
  6. Combine ketchup and mayo to make the topping sauce.
  7. Drizzle the sauce on top after baking and garnish with fresh alfalfa sprouts.

Pro Tip

If you prefer your bell peppers to be on the tender side, add an additional 15-20 minutes of baking time.

  • Bell Peppers – fresh bell peppers, color of choice.
  • Ground Beef – 20% fat mix preferred, but lean ground beef mixes will work too.
  • Salt – sea salt preferred.
  • Black Pepper – ground.
  • Garlic Powder – ground garlic powder.
  • Onions – freshly chopped onions.
  • Crumbled Feta Cheese – crumbled feta cheese in a container. Comes crumbled ready to use located in the temperature-controlled section in grocery stores.
  • Stems Alfalfa Sprouts – fresh and packaged in a plastic box, optional garnish.
  • Mayo – standard mayo.
  • Ketchup – regular ketchup. Can use Sugar Free Ketchup for a low-carb sauce.

Boil or Don’t Boil Pepper Before Stuffing

While boiling the bell peppers before stuffing them is an option to achieve a very tender texture and reduce baking time, it is not necessary. By baking the peppers longer in the oven, you can achieve the desired tenderness without the extra step of boiling. This allows the flavors to meld together during the baking process.

Bell Pepper Stuffing


  • 1/4 Cup Mayo
  • 1/4 Cup Ketchup use sugar-free ketchup for a low-carb sauce.


  • Gather all the ingredients.
  • Preheat oven to 350F.
  • Chop onions and set aside.
  • Cut the tops off the bell peppers, remove the seeds with a spoon and add bell peppers into a baking dish as shown below. Note - The easiest way to do this is to cut the bell peppers about a half-inch from the top and gently pull the top off.
  • In a small mixing bowl, combine salt, black pepper, garlic powder and mix well.
  • In a large mixing bowl, add ground beef and combine half the seasoning and mix. Once completed, combine the other half of the seasoning and mix. Note - we add the seasoning in stages to ensure even distribution.
  • In a large frying pan, add seasoned ground beef and chopped onions over medium-high heat, break apart the meat with a spatula and cook for 3 minutes or until browned.
  • Once the ground beef is cooked, add to a clean mixing bowl and combine well with feta cheese as shown below.
  • Stuff the ground beef mixture into the bell peppers from step 3). Cover the baking dish with aluminum foil and bake in the oven for 25-35 minutes or until preferred bell pepper tenderness.
  • In the meantime, prepare the sauce by combining mayo and ketchup.
  • Once bell peppers are done, apply a generous amount of sauce followed by a pinch of optional alfalfa sprouts. Enjoy with a knife and fork!
