Garlic Aioli Chicken Chaffle


If you’re looking for a quick low-carb/keto lunch that’ll keep you full until dinner time, look no further then this simple and easy Garlic Aioli Chicken Chaffle!  This is one of our go-to lunches when we’re recipe creating because ironically, we never have time to sit down and eat a proper lunch!

This recipe takes the idea of using our base chaffle recipe and sandwiching it in-between shredded rotisserie chicken (Costco is your friend) with some of our garlic aioli spread for a quick bite. 

If you don’t have access to ready-made rotisserie chicken, we included an optional step to boil your own chicken to use in this recipe, but do note it’ll increase the required cooking time.

So for those that are new to low-carb/keto or maybe just getting back into the lifestyle, you might be asking ‘what in the world are ‘chaffles‘?’.  Chaffle means cheese + waffle.  It’s a mixture of just cheese and egg cooked in a waffle iron for a few minutes and viola, you have yourself a very versatile bread alternative for all kinds of quick recipes!

The whole recipe takes about ~7 minutes to make (or ~5 minutes if you have two Dash Mini Waffle Maker), only 6 ingredients and tastes absolutely delish!  So what are you waiting for?  Go make yourself a quick chaffle lunch!  

This recipe will run ~3g net carbs due to the anti-caking ingredients found in most pre-shredded store bought cheese.  So if you’re strict on your carbs, you can shred your own block cheese which will net you ~1g net carbs on the recipe.

For this dish, the special ingredient you would need is Kewpie Mayo, which you can get on Amazon or at a local Asian supermarket.  You will also need a waffle maker.  We use the Dash Mini Waffle Maker because it makes the perfect size waffles, but any waffle maker will do

Note – If you are preparing multiple servings, we would recommend using 2 Dash Mini Waffle Maker simultaneously to reduce the cooking time.

Ingredients

  • 1/4 Cup Shredded Rotisserie Chicken (or 1 Chicken thigh if cooking it yourself)
  • 2 tbsp Kewpie Mayo (you can sub with American mayo but will alter taste)
  • 1/2 tsp Lemon Juice
  • 1 Garlic Clove (Grated)
  • 1 Egg
  • 1/2 Cup Shredded Mozzarella Cheese

Directions

1) Gather all the ingredients.

2a) Shred rotisserie chicken and set aside.

2b) If cooking your own chicken.  In stove top pot, add enough water to cover chicken thighs and bring water to boil.  Once the water boils, sprinkle some salt into stove top pot and add chicken.  Reduce heat to medium and cover stove top pot 7/8 of the way to expose a little room for evaporation.  Cook for 20 minutes.  Once 20 minutes has passed, remove chicken and place onto cutting board.  Gently sweep the knife left to right with the knife pointing with the grain of the meat. The chicken should pull apart and form shreds.

3) Grate garlic with a grater or garlic press and add into mixing bowl.

4) Combine Kewpie Mayo and lemon juice into mixing bowl and mix well.  Transfer to a small dipping bowl. Garlic Aioli Chicken Chaffle Recipe (23)

5) Plug-in Dash Mini Waffle Maker to pre-heat.

6) In a small mixing bowl, beat egg.

7) Place about 1/8 cup shredded Mozzarella cheese on to the Dash Mini Waffle Maker, followed by ~1/2 of the egg mixture (enough to cover the iron) and another 1/8 cup of shredded Mozzarella cheese on top.  Close lid and cook for 3 – 4 minutes.  Repeat for as many waffles you are making.

8) To assemble, generously spread sauce onto one side of the chaffles.  Place shredded chicken on top of the sauce and sandwich the other chaffle with spread touching the chicken.  Enjoy!
