Garlic Chicken Stir Fry with Green Onions

Ironically enough, we often contemplate about what we’re going to have for dinner!  Even though we have a lot of recipes here on LCA, the last thing we want to do after cooking all day is to cook all night!   So for those times, we dive into our quick recipe box and pull out this garlic chicken stir fry with green onions dish!

And just because this dish can be made in less than 50 minutes, don’t let that fool you in thinking it’s going to be tasteless and bland!  No, no, no!

This one’s delicious and packed with flavors of garlic, salt and pepper that really bring out the natural umami flavors of the chicken!

If you’re curious, here’s the story of how this little stir fry dish came about!  Of all places, I learned this recipe on a fishing boat!

If you happened to read our Easy Shrimp Ceviche or Baked Fish n Chips recipes, you might recall how I love to go fishing.  It was on one of those trips where the chef on the boat made a dish out of some freshly caught albacore we had.

It was so good that I asked the chef for the recipe and he gladly shared it with me (I was about 13-14 years old at the time)!

When I came home, I replaced the albacore for more easily accessible chicken thigh and it came out just as tasty!  So thank you ‘fishing boat chef’ wherever you are!

So to start this simple and easy stir fry recipe, we begin by cutting the chicken into cube size pieces and placing it in a mixing bowl.  Next, up we add the grated garlic, olive oil, salt and black pepper and optional red pepper or Togarashi and mix all that together.

We then cook the seasoned chicken on a frying pan and finish it off with some freshly sliced green onions.  Serve it on a plate and enjoy this super simple chicken stir fry!

The only special ingredients needed for this recipe is Togarashi (optional and can also be substituted with Red Cayenne Pepper), which can be picked up on Amazon or a local Asian Supermarket.

Ingredients

  • 1/2 lb Boneless and Skinless Chicken Thigh (about 2-3 pieces)
  • 2 tbsp Olive Oil
  • 1/4 tsp Salt (to taste)
  • 1/8 tsp Black Pepper (to taste)
  • 1/16 tsp Togarashi (optional and can also be substituted with Red Cayenne Pepper)
  • 2 Garlic Cloves
  • 2 Stalk Green Onions

Directions

1) Gather all the ingredients.

2) Cut chicken into 1/2 x 1/2 cube size bites and add into a mixing bowl

3) Grind garlic with a grinder or a garlic press and place into a mixing bowl.

4) In the same mixing bowl, add olive oil, salt, black pepper, Togarashi (optional), toss well and set aside.

5) Finely chop green onions and set aside (we cut them at a 45 degree angle, but you can chop them however you like).

6) Heat a large Teflon frying pan on high heat and bring up to temperature (about 1 minute).  Once up to heat, reduce to medium high, add the chicken from the mixing bowl and cook for 3-4 minutes occasionally stirring until chicken is browned.

7) Once chicken is browned, add in green onions, cook for 10 additional seconds and transfer to serving plate.  Enjoy hot!
