Garlic Chicken Stir Fry with Green Onions

Ironically enough, we often contemplate about what we are going to have for dinner.  We do have a lot of recipes here on LCA but the last thing we want to do after cooking all day is to cook another meal!  So those are the times that we dive into our quick recipe box and pull this dish out in under 10 minutes!  Although this dish is super quick to make, it is still delicious and packed with flavors, so don’t let the ‘quick and easy’ fool you!  Just a little background about this recipe if you are curious – I learned this recipe on a fishing boat, of all places!  If you happened to read our Easy Shrimp Ceviche or Baked Fish n Chips recipes, you might recall how I love to go fishing.  It was on one of those trips where the chef on the boat made a dish out of some freshly caught albacore we had.  It was so good that I asked the chef for the recipe and he gladly shared it with me (I was about 13-14 years old at the time)!  When I came home, I replaced the albacore for more easily accessible chicken thigh and it came out just as tasty!  So thank you ‘fishing boat chef’ where ever you are for this recipe and we hope everyone can enjoy it as well!
