If you read our Japanese Spinach Salad entry, you’d know how much we love our spinach! Spinach is readily available throughout the year, healthy, and very easy to cook with, so we do have quite a few recipes here on LCA for this wonderful super vegetable! This garlic spinach stir fry recipe is the newest addition to our recipe collection and was inspired from my Mother-In-Law’s spinach stir fry!
Her version isn’t quite low-carb/keto friendly, so we had to make some minor adjustments, but still tastes as good and is super easy to cook!
We start by simply mincing up some garlic. From there, we add the spinach into a fry pan with hot neutral cooking oil and cook that for a minute or so. Once the spinach is cooked, we add the minced garlic, sprinkle in some salt, and top with some bonito flakes. That’s it!
Now as a superfood, spinach has a range of health benefits. It’s packed with vitamins and minerals that aid in providing bone health, preventing cancer, and improving blood glucose control in people with diabetes. In addition, spinach is high in fiber and water, both of which help to prevent constipation and promote a healthy digestive tract.
With all these amazing health benefits, it’s no wonder spinach is considered a superfood!

For this dish, the only special ingredients you would need is the optional bonito flakes, which can be picked up on Amazon or a local supermarket.

Ingredients
- 4-5 Cups of Spinach Leaves
- 2 Garlic Clove
- 1 tbsp Vegetable Oil (or any neutral tasting oil you prefer)
- 1/8 tsp of Salt (to taste)
- 2 tbsp Bonito Flakes (optional for umami taste)
Directions
1) Gather all the ingredients.
2) Prepare, cut and wash spinach as needed.
3) Finely dice garlic and set aside.
4) In a large Teflon frying pan or wok, add vegetable oil and bring up to heat on high. Once oil starts to lightly smoke (about 2-3 minutes), add spinach (caution for hot oil spattering) and cook for 30 seconds while continuously mixing.
5) After 30 seconds, add garlic and salt, mix/stir until spinach are fully cooked, about 30 – 60 seconds. Top with optional Bonito Flakes and serve hot.

- 4-5 Cups Spinach Leaves
- 2 Cloves Garlic
- 1 tbsp Vegetable Oil (or any neutral tasting oil you prefer)
- 1/8 tsp Salt to taste
- 2 tbsp Bonito Flakes optional for umami taste
Instructions
