  • Gelatin – unflavored Gelatin used to make jelly. Can be found at your local supermarket.
  • Vanilla Extract – concentrated flavors of Vanilla found in baking section of grocery stores.

Directions

Step 1 Start by boiling down chopped strawberries, water, and sweetener in a saucepan under medium heat. After 5-7 minutes, gently stir and break apart the strawberries while cooking.

Step 2 In a separate saucepan, bloom gelatin in cold water. Transfer the boiled strawberry mixture to the gelatin mixture, add vanilla extract, and heat gently until steaming. Be careful not to let it boil. Strain the mixture into a molding dish or bowl, using a strainer to remove any solids.

Ingredients

  • 2 Cups Strawberries chopped
  • 6 tbsp Sweetener your preferred sweetener
  • 2 tbsp Water
  • 1 1/2 Cups Cold Water
  • 2 tbsp Gelatin 2 x 1/4 oz packets
  • 1/2 tsp Vanilla Extract

Instructions

  • Gather all the ingredients.

  • De-stem strawberries and chop loosely.
    Chopped strawberries.
  • In a small stove top pot, add strawberries, sweetener, and 2 tbsp of water.

  • Cook on medium heat until boiling, then turn down to low stirring often. After about 5-7 minutes, lightly crush down the strawberries with a spatula, remove from heat and set aside.

  • In a new medium stove top pot, mix gelatin with cold water until well incorporated.

  • Add strawberry sauce and vanilla extract, place on medium-low heat until lightly steaming then remove from heat. Strain mixture in a very fine mesh strainer and pour mixture into dessert dish or molds. Note - Do not boil.

  • Place in refrigerator for at least 3 hours or until firm. Serve with optional whipping cream.

  1. would you follow the same steps even if using cookie cutters?

    • Hi Carol! If you’re using cookie cutters, I’d suggest setting the jello in a glass baking dish first, then using the cutters for your desired shapes. However, cookie molds could be even better as they won’t result in any wasted jello. Hope this helps!

      Hi Elena – I’ve never worked with BaKol gel before, but looking at the description, I don’t see why not. I would suggest replacing the gelatin with the BaKol, water amount per instructions on package and adjusting sweetness to taste.

      Hi Kelly! I think you can directly replace whatever fruit you want with the strawberry. You might need more of less depending on the exact fruit you’re using, but the berries should all be around the same.

      Hi! We’ve never used frozen strawberries before, but I’d think it would work just fine. Might take a little longer to thicken due to the extra ice/water though.
