Japanese Sandwich Bites

As a parent,  you learn to be creative!  If your kid has an accident and you don’t have an extra pair of clothes, you improvise.  When they are painting and they run out of a color they ‘have to have’, you google ‘how to mix colors’.

Japanese Sandwich Bites LowCarbingAsian Pin 1

This Japanese Sandwich Bites came about kind of in the same way!  My kid requested a sandwich but given we didn’t have any bread…I had to improvise.  So I opened the fridge, looked at what we had and created this dish for her.

After I was done, I said “here you go”. She ate one and looked at me and said “it’s yummy papa, but it isn’t a sandwich”!!

This dish is low-carb/keto friendly and also surprisingly very packed with flavors given the simplicity of the ingredients.

I feel like the tomato and cucumber texture really complement one another and really give a juicy crunchy bite!

One ingredient I highly recommend for this dish is Kewpie Mayo.  This is Japanese mayo and the taste is very different from your Best Foods or Hellman’s brand.

It is much more creamier and sweeter than the American style mayos.  You can try with American mayo, but I don’t think it would give it that creamy texture that sets things off.

Now, let’s get started!
