As a parent, you learn to be creative! If your kid has an accident and you don’t have an extra pair of clothes, you improvise. When they are painting and they run out of a color they ‘have to have’, you google ‘how to mix colors’. When you are in need of a quick easy snack, you can have to make one up like these Japanese Sandwich Bites!
This Japanese Sandwich Bites came about kind of in the same way! My kid requested a sandwich but given we didn’t have any bread…I had to improvise. So I opened the fridge, looked at what we had and created this dish for her.
After I was done, I said “here you go”. She ate one and looked at me and said “it’s yummy papa, but it isn’t a sandwich”!!
This easy snack is also surprisingly very packed with flavors given the simplicity of the ingredients.
I feel like the tomato and cucumber texture really complement one another and really give a juicy crunchy bite!
One ingredient I highly recommend for this dish is Kewpie Mayo. This is Japanese mayo and the taste is very different from your Best Foods or Hellman’s brand.
It is much more creamier and sweeter than the American style mayos. You can try with American mayo, but I don’t think it would give it that creamy texture that sets things off.

Ingredients
- 1 Persian Cucumber
- 8 Cubes 1/2″ by 1/2″ Mild Cheese (we use Colby Jack)
- 1-2 Slices Roasted Turkey
- 8 Drops Kewpie Mayo
- 4 Whole Cherry Tomato
- 8 Toothpicks
Directions
1) Gather all the ingredients.
2) Peel the Persian cucumber’s skin off every other stroke with a peeler. Cut 8 slices that are about 1/2 inch thick.
3) Cut cheese into 8 cubes measuring around 1/2 X 1/2 inch (doesn’t need to be exact). Place on top of cucumbers.
4) Take 2 slices of roasted turkey and cut into 1/2 inch width slices. Roll up each strip and place on top of the cheese.
5) Add a small squeeze of Kewpie Mayo onto the turkey.
6) Slice tomatoes in half and place a toothpick through the center top of each tomato.
7) Pick up tomatoes by the toothpick and stick it through each turkey/cheese/cucumber combination.
