  • Pork – thinly sliced pork butt/shoulder.
  • Onion – yellow or brown onion.
  • Neutral Oil no taste or flavor with high cooking temperature. Some choices are sunflower oil, peanut oil, sallower oil, vegetable oil, and canola oil. 
  • Soy Sauce – low-sodium Soy Sauce preferred. Can also use tamari for gluten-free.
  • Japanese Sake – typically will come in a large bottle labeled junmai sake. Can also substitute with dry sherry wine or Chinese cooking wine, found at local grocery stores or Asian markets. 
  • Sweetener –  use your preferred sweetener.
  • Garlic– freshly grated garlic.
  • Togarashi (red pepper)Togarashi Japanese chili pepper blend found in most Asian or Japanese supermarkets. A good alternative would be cayenne pepper or red pepper.
  • Toasted Sesame Oil – 100% Toasted Sesame Oil that should have a dark brown color.  
  • Green Onion – finely chopped green onion scallions.
  • Toasted Sesame Seeds – optional garnish.

For pork stir fry recipes, thinly sliced pork butt or shoulder is the ideal choice. These cuts offer the right balance of fat and meat, making the stir fry juicy and flavorful. You can easily find these cuts at most Asian supermarkets labeled ‘shabu shabu’.

We acknowledge that mirin might not be readily available in all locations. To maintain the authentic flavors of this Japanese stir fry, my recipe modifies the ratio of Japanese sake and sweetener to substitute for mirin, ensuring you can savor this stir fry regardless of your location.

Step 2 Bring a wok or large skillet up to heat, coated with oil. Add in sliced onions and cook for 1-2 minutes until softened.

  • 1/2 lbs Pork thinly sliced butt/shoulder

  • 1 tbsp Cooking Oil neutral, no flavor or taste
  • 2 tbsp Soy Sauce
  • 2 tbsp Japanese Sake

  • 1/4 tsp Togarashi can replace with red pepper
  • 1 tsp Toasted Sesame Oil
  • 1 Stalk Green Onions
  • 1/2 tsp Toasted Sesame Seed optional


  • Gather all the ingredients.

  • Slice onions and chop green onions as shown below.

  • Grate garlic with a grater and place it into a small mixing bowl. Add in Soy Sauce, Japanese Sake, sweetener, Togarashi, Toasted Sesame Oil and mix until well combined.

  • In a large frying pan or wok, add neutral cooking oil and bring up to temp on medium heat. Add in sliced onions and cook for 1-2 until slightly softened.

  • Next, bump heat up to medium-high, add in thinly sliced pork and cook for 2-3 minutes until meat is browned as shown below.

  • Add in the sauce from step 3), cook for 30-45 seconds and then transfer to a serving plate. Top with green onions, optional Toasted Sesame Seed and enjoy hot!
