This bacon cheddar cauliflower gratin is full of cheesy, bacon goodness and a real crowd pleaser! Best of all, it’s quick, easy and low carb!
I’ve been really into cauliflower rice recipes lately, so I decided to experiment with a cauliflower gratin.
Since bacon and cheese can basically make anything taste good, I decided to start with that. I was so glad I did because this dish is a real winner!
The bacon and cheese make this dish taste like a comforting breakfast but hearty enough for any meal of the day. Also makes for a perfect side dish!
What is a bacon cheddar cauliflower gratin?
This dish contains butter stir-fried cauliflower rice topped with cooked crispy bacon, then sprinkled generously with cheddar cheese and baked in the oven until golden brown. The use of cauliflower rice makes this dish not only healthy and low carb friendly, but also very filling!
Can you double this recipe?
You can definitely double or even triple this recipe if you are feeding a large group of people. Just keep in mind that the cooking time will slightly vary for the larger portions.
What type of cauliflower rice should I use to make gratin?
I prefer to use frozen cauliflower rice since it’s easy and keeps well in the freezer. Of course, you can use fresh or even make your own cauliflower rice, however cooking times will slightly vary.
What type of baking ware should I use for this gratin recipe?
You can use any oven safe baking dish. I have used both glass and ceramic with no problems.
What other types of cheese can I use for this gratin recipe?
If cheddar is not your thing, you can use any cheese that melts but keep in mind it’s best to choose a cheese that’ll pair well with bacon. My personal favorite is gruyere.

Ingredients
- 3 Cups Cauliflower Rice (or rice of choice)
- 6 Slices Bacon
- 1/4 Cup Chopped Yellow Onion (about 1/2 of an onion)
- 3 tbsp Butter
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1 Cup Shredded Cheddar Cheese
- 2 Stalk Green Onion
Directions
1) Gather all the ingredients.
2) Preheat oven to broil 500F.
3) Chop onion, bacon and green onions as shown below.
4) In a Teflon frying pan, melt butter over high heat. Once the butter is melted, stir in the cauliflower rice, sprinkle in salt and black pepper and cook for 2 minutes. Once 2 minutes have passed, evenly transfer cauliflower into baking dish.
5) In the same Teflon frying pan, add chopped bacon on high heat and cook for 2 minutes. After 2 minutes, add in chopped onions and cook for 1-2 minutes or until onions start to slightly brown. Once done, use a slotted spoon/spatula to evenly transfer on top of cauliflower rice. Note – transfer the contents only and discard oils/juices.
6) Next sprinkle cheddar cheese on top ensuring everything is covered. Transfer to oven (middle rack) and broil for 3-5 minutes or until the cheese is melted.
7) Top with chopped green onions and serve hot!
