Cauliflower Bites


Truth be told, I never cooked with cauliflower before, not once.  I actually had to ask Alexia “how long do you boil cauliflower”? 

Thinking back on it, I am not even sure why we had it in our fridge, but it was taking up room so I just put some flavors together that I envisioned would go well and it happened to be one of those few times, in married life, I was right.

I passed these out to relatives that happened to be there that day and they all enjoyed it, which is surprising because I know they rarely eat cauliflower.  I guess it is one of those ways of remembering that you will never know what you like until you try it!

This dish is low-carb/keto friendly and also infused with layers of flavor.  Cauliflower is packed with natural Vitamin C and if you are not a huge fan of cauliflower, hopefully this recipe will change that and make getting your Vitamin C enjoyable!

A note is that this dish does call for a lot of steps, but it isn’t hard at all to make.  I try to only make recipes that are relatively straightforward but sometimes to get that rich taste layer, it requires multiple simple steps. 

Hopefully, these directions will breeze you through that though!  This dish does call for dashi, which is attained from Bonito Flakes.  I wouldn’t say it is a MUST, but you would be missing out on the ‘umami’ flavor without it.

Servings 14 Pieces

Ingredients

  • 3 cups Water
  • 1/2 cup Bonito Flakes
  • 1/4 of Cauliflower Head (should yield about 14 pieces of bite-size cauliflower)
  • 1/2 tbsp Butter (Grass Fed for Keto)
  • 1/2 tsp Soy Sauce
  • 14 Thinly Sliced Jalapeno
  • 14 Cubes of any Sharp Cheese Cut into 1/2 x 1/2 Cubes (we use English Cheddar with Caramelized Onions)
  • 3-4 Roasted Turkey Slices
  • Lightly Salt and Black Pepper to Taste
  • Sesame Seed for Garnish

Directions

1) Gather all the ingredients.

2) Place Bonito Flakes into a strainer and place inside stove top pot.  Bring water to boil.

3) Once water comes to a boil, reduce heat to simmer.

4) While waiting for the water to boil, trim cauliflower into bite size pieces.

5) Remove strainer from stove top pot and discard Bonito Flakes. You now have ‘umami dashi’, the not so secret ingredient to Japanese cuisines.

6) Bring stove top pot back to high and add cauliflower.  Cook for approximately 5 minutes or until tender.  Once tender, take cauliflower out and place on serving plate.

7) While waiting for the cauliflowers, thinly slice jalapeno, remove any seeds and set aside.  You will need 14 slices of jalapeno (one per bite).

8) Cut turkey into 4 equal parts per slice and set aside.  You will need 14 strips of the turkey (one per bite).

9) Cut any sharp cheese (we used English Cheddar with Caramelized Onions) into 14 cubes that measures around 1/2 X 1/2 inch.   Set aside.

10) By now, the cauliflower should be done, so per step 6), strain water from stove top pot and place on serving plate.

11) Melt butter inside a microwave safe bowl.  Time will vary, but for our 1100W microwave, it takes about 30 seconds.

12) Once butter is melted, add Soy Sauce, mix and set aside.

13) Add cheese on top of plated cauliflower.  If your cauliflower is still hot, the cheese should start to melt.  If your cauliflower is not hot, place cheese on top and melt in microwave for about 20 seconds (time will vary depending on microwave).

14) With cheese melted, add turkey on top.  The melted cheese should serve as a ‘food glue’, so it shouldn’t be too hard to get the turkey to stay in place.

15) Lightly salt and pepper to taste.

16) Add jalapeno slices.

17) Sprinkle Sesame Seeds and lightly drizzle soy sauce butter sauce (butter shouldn’t solidify quickly since it is mixed with soy sauce, but it does just microwave for a couple of seconds).
