Keto Cream Cheese Ginger Cinnamon Cookies


If you happened to read our recipe for Keto Ginger Ale, you may recall how we mentioned ginger is considered one of those Asian ‘old wives-tale’ cure-all ingredients.  It does it all, from boosting your immune system to keeping you warm during the winter months.  So with all these health benefits, we try to integrate and experiment with ginger whenever we can. 

As we were testing our cookie recipes, we figured we might as well make some ginger batches and see how it turns out.  Our initial thought was this would be a disaster, but then we realized there are other desserts and sweets made with ginger, like gingerbread cookies, ginger candy, ginger cake, so it might actually turn out OK.

We created our test batch and waited in anticipation of what would come out.  40 minutes later, to our delight, out came this Keto Cream Cheese Ginger Cinnamon Cookies awesomeness! 

It doesn’t happen every time, but it’s a great feeling when an experiment pans out!  Hope you guys enjoy this one!

These cookies come out to ~1.5g net carbs per cookie, very low-carb/keto friendly for a dessert!  They are perfectly balanced with sweet ginger, cinnamon, and cream that you won’t believe they are low-carb/keto!

For this one, you will need Almond Flour and Swerve/Monkfruit as the special ingredient, which can be purchased on Amazon or a local specialty supermarket.

Now, let’s get started!

Cooking Time 16-20M

Cooling Time 10M

Total Time 35M

Net Carb/Cookie ~1.5g

Servings 12 Cookies

Ingredients

  • 1 1/2 Cup Almond Flour
  • 1/4 Cup Monkfruit, Swerve or Sweetener of Choice
  • 1/3 Cup Salted Butter Melted
  • 2oz Cream Cheese (softened)
  • 1 tsp Ground Ginger
  • 1 tsp Cinnamon

Directions

1) Gather all the ingredients.

2) Preheat oven to 325F.

3) Melt butter in a small bowl in the microwave (about 45-60 seconds).

4) In a large mixing bowl, combine Almond Flour, Swerve/Monkfruit, cream cheese, melted butter, ground ginger and cinnamon.  Note – make sure melted butter is at room temperature when pouring otherwise it will ‘cook’ the batter.

5) Mix well for about 1 minute with a hand/stand mixer.

6) Roll the dough into 1 inch size balls and place on a silicone baking mat or greased baking sheet.

7) Press down the dough balls using your palm of your hand to roughly 1/4 inch thickness.

8) Bake at 325 F for 16-20 minutes (ours took 17 minutes) or until bottom edges start to slightly brown. Once done, wait at least 10 minutes for cookie to cool down prior to handling. We prefer enjoying the cookies once they have completely cooled down and hardened, which takes about 1 hour, but it’s up to you!
