How to make Keto French Toast?


  1. Combine coconut flour, sweetener, baking powder, eggs, room-temperature cream cheese, and a dash of vanilla extract in a mixing bowl. Use a hand mixer or stand mixer to blend the ingredients until a smooth consistency is achieved.
  2. Next, pour the batter into a pre-heated waffle iron and cook for approximately 3-4 minutes until the pancakes are nicely browned.
  3. For the French toast coating, create an egg mixture by whisking together one egg, heavy cream, a pinch of cinnamon powder, sugar-free maple syrup, and a hint of vanilla extract in another mixing bowl.
  4. Dip each slice of the prepared pancake toast into the egg mixture, ensuring they are evenly coated.
  5. In a large skillet, melt a pat of butter over medium heat. Place the coated pancake slices onto the skillet and cook for about 1-2 minutes on each side, or until they turn golden brown and crisp.
  6. For an extra burst of flavor and freshness, consider topping your keto French toast with a handful of blueberries, blackberries, or sliced strawberries.

What ingredients do I need to make keto French toast?


  • Coconut Flour – fine ground Coconut Flour.
  • Sweetener use your preferred sweetener.
  • Baking Powder – standard Baking Powder to help the batter rise.
  • Egg – at room temperature and beaten.
  • Cream Cheese – blocks and at room temperature.
  • Vanilla Extract – concentrated flavors of Vanilla found in baking section of grocery stores.
  • Heavy Cream – heavy cream or heavy whipping cream. 
  • Maple Syrup – your preferred brand of Sugar Free Maple Syrup or sugar-free syrup.
  • Cinnamon – ground.
  • Butter – salt or unsalted will both work.

What to do with leftovers?

To store leftovers, place them in an airtight container or wrap them with plastic wrap and keep them in the fridge for 2-3 days. When reheating, use the microwave for convenience. For optimal results, it’s recommended to store only the portions that haven’t been drizzled with syrup, as the syrup can cause sogginess.

To meal prep, place each slice in its own individual freezer bag. When you’re ready to enjoy a prepped slice, just defrost it in the microwave. After that, coat the defrosted slice with the French toast coating mixture and cook it following the recipe instructions.

  • Gather all the ingredients. Note – For quick room temperature eggs, submerge the egg in warm water for 3-5 min. For quick room temperature cream cheese, take the amount needed and microwave for 10-15 sec.
  • Plug-in Dash Mini Waffle Maker to pre-heat.
  • In a mixing bowl, add in ingredients for the toast which consists of Coconut Flour, sweetener, Baking Powder, egg, cream cheese and Vanilla Extract. Use a hand mixer to combine all ingredients together until a smooth consistency is formed.
  • Pour about half the batter into a waffle iron and cook for 3-4 min until browned to liking.
  • In the meantime, add 1 egg, heavy cream, Sugar Free Maple Syrup, cinnamon, and Vanilla Extract into another mixing bowl. Hand whisk or use a hand mixer to mix all the ingredients.
  • Once toasts are cooked, dip into French toast coating and set aside.
  • In a Teflon frying pan, melt butter on medium low heat. Once butter is melted, transfer coated toast and cook for 1-2 minutes per side until browned and transfer to a serving plate. Top with optional berries of choice!
