Shortly after we created our recipe for the Cream Cheese Breakfast Egg Bites, we happen to be eating some of my mother-in-law’s Meat Stuffed Jalapenos (a recipe on our list of to-do’s) when out of the blue, she mentioned how Jalapeno stuffed eggs are great too and out came these Jalapeno Bacon Egg Bites!
Mind you, she had no idea about our creation of the Cream Cheese Breakfast Egg Bites, so this was a total coincidence! I immediately agreed and started to run different ingredient compositions in my head.
We actually contemplated adding jalapeno into the Cream Cheese Breakfast Egg Bites but opted against to keep the ingredient list simple as possible.
But since the main focal point of this recipe is jalapeno, we’d be able to use as much as we wanted!
Using that as a base along with our egg mixture, we tweaked a few things to accompany the extra flavors of the jalapeno and came up with a nice little variation!
It’s just as easy to make as the Cream Cheese Breakfast Egg Bites, but the only difference is stuffing them inside a jalapeno rather than using a muffin tray. It’s an extra 2-3 minutes more work, but adds so much more to the egg base!
A little creamy, a little spicy, a little low-carb/keto with a boat load of deliciousness! Hope you enjoy it!
This great little breakfast/snack dish is low-carb/keto friendly at ~1g net carb per bite or around ~6g net carbs for the entire batch.
The special ingredients needed for this recipe are Soy Sauce and Kewpie Mayo (you can substitute this with regular Western/American mayo). All these can be picked up on Amazon or a local Asian Supermarket. You will also need a silicone baking mat and a hand mixer.

Serving 10-12 Jalapeno Bites
Ingredients
- 5-6 Large Jalapenos
- 2 Eggs
- 4 tbsp Grated Parmesan Cheese
- 2 tsp Kewpie Mayo (can substitute for American mayo)
- 1 tsp Heavy Cream
- 1/2 tsp Soy Sauce
- 1 Stalk Green Onion
- 1 Slice Bacon
Directions
1) Gather all the ingredients.
2) Preheat oven to 325F.
3) Prepare green onion by finely chopping them and set aside.
4) Finely chop bacon into ‘bacon bit’ sizes and set aside.
5) Cut jalapenos in half long ways and de-seed leaving a couple of seeds in there for the spiciness (do not remove stems). Line up jalapenos on a silicone baking mat or lined oven tray concave upwards and set aside.
6) In a mixing bowl, add eggs, grated Parmesan cheese, Kewpie Mayo, heavy cream, and Soy Sauce and with a hand mixer.
7) Add chopped green onions and bacon bits into egg mixture and mix lightly.
8) Carefully fill each jalapeno with ~1 tbsp of egg mixture.
9) Once oven is up to temperature, place the tray in the CENTER of the oven and bake for 12-16 minutes until egg mixture is no long runny. Enjoy!
