If you have been following our website, you may know that my favorite season is Winter.  There is just something about the nice crisp air and the holiday atmosphere that you just can’t beat – and of course, it was also the time of the year that my mom made some of my favorite soups!  Everything from Tonjiru, Dango Soup, Shiitake Soup and My Mom’s Chicken Soup was on rotation and it was a great time of the year!  On top of that, my mom would make a traditional Japanese soup called Ozoni every New Year’s day!  Ozoni is part of a larger traditional 1st meal called ‘osechi’ and it’s kind of a way to ring in the new year with a proper meal.  But just because it isn’t New Year’s day doesn’t mean you can’t enjoy this great tasting soup!  Since the traditional recipe uses mochi as the base ingredient and we are trying to keep things low-carb/keto, we made some adjustments to it while retaining the traditional taste!  So next time you are looking for a way to experience traditional Japanese dishes while keeping it low-carb/keto, give this one a try!

This dish is low-carb/keto with ~2g carbs per serving, so eat up to stay warm during the winter months!  The soup offers a very delicate balance of sweet soy sauce and umami packed with chicken oils.

For this one, the special ingredients are Japanese sake (can replace with dry sherry), bonito flakes, Dried Shiitake Mushrooms, Shirataki Noodles and soy sauce.  You can pick up everything aside from sake on Amazon or a local Asian supermarket.

Directions

1) Gather all the ingredients.

2) In stove top pot, make 4 cups of dashi (tutorial on how to make this here).

3) In the meantime, peel and finely slice carrots and set aside (we sliced them at 45 degree angle for this recipe, but you can slice them however you like).

4) Prepare Shirataki Noodles by straining prepacked liquid and washing noodles under cold water.  Set aside in a bowl.

5) Cut chicken thighs into 1/2 x 1/2 inch bite size pieces.  Set aside.

6) Finely slice green onions and set aside (we sliced them at 45 degree angle for this recipe, but you can slice them however you like).

7) Bring dashi to a boil on high heat.  Once boiling, reduce heat to medium and add chicken, sliced carrot, whole Dried Shiitake Mushrooms, Soy Sauce, salt and Japanese sake.  Cook for 10 minutes.

8) Once 10 minutes as passed, add in Shirataki Noodles and cook for 1-2 minutes until desired tenderness is attained.

9) Transfer to serving bowl and top with slices green onions.  Akemashite omedetou gozaimasu – Itadakimasu!!
