Japanese Chicken Soup – Ozoni

If you’ve been following LCA for a while now, you might’ve read that my favorite season is Winter!  There’s just something about the nice crisp air and the holiday atmosphere that you just can’t beat! And of course, it was also the time of the year that my mom made some of my favorite soups!

Everything from Tonjiru, Dango Soup, Shiitake Soup and My Mom’s Chicken Soup was on rotation and all was good in the world!  On top of that, my mom would make her traditional Japanese Chicken Soup – Ozoni every New Year’s day that’d just be the icing on the cake!

Ozoni soup is part of a larger traditional 1st meal called ‘osechi’, which is the traditional Japanese way to ring in the new year with a proper meal.  But just because it’s not New Year’s doesn’t mean you can’t enjoy this great tasting soup whenever you feel like it!

The traditional recipe uses mochi as the base ingredient and since we’re trying to keep things low-carb/keto, we made some adjustments to the base while retaining the traditional taste!

It’s light and delicate in taste with flavors of salty umami roaming around.  The best part of the soup though is the chicken oils glistening up on the top to keep soup nice and hot!

So next time you are looking for a way to experience traditional Japanese dishes while keeping it low-carb/keto with ~2g net carbs per serving, give this easy and simple soup a try!

For this one, the special ingredients are Japanese sake (can replace with dry sherry), Bonito Flakes, Dried Shiitake Mushrooms, Shirataki Noodles and Soy Sauce.  You can pick up everything aside from sake on Amazon or a local Asian supermarket.

Now, let’s get started!
