This simple keto low carb cheese risotto is the perfect complement to any meal! The rich cheesy flavors really make your taste buds dance for joy!
A long time ago, before my gestational diabetes days, I frequented a Japanese restaurant that served the best cheese risotto.
It was served tableside, in the cheese wheel. The server would bring the wheel out and start mixing the risotto inside the wheel and of course, I would always ask for extra cheese!
Unfortunately, that restaurant has since closed, and I have also adopted a low carb lifestyle.
But, that doesn’t mean I can’t try to create a low carb version of the cheese risotto I loved so much! This is why I made this recipe so that you can also enjoy delicious cheese risotto low carb/keto style!
This cheese risotto recipe took a few tries to test what best worked to substitute rice. In the end, the mildness of cauliflower seem to fit best to produce a low carb dish similar to traditional rice risotto.
I think you will be pleasantly surprised at how well the cauliflower rice combines with the cheese and cream creating a delicious and satisfying dish.
This dish is very rich, as are most risotto dishes and therefore very filling. It produces two small bowls of risotto perfect for accompanying a steak or another protein. But if you are eating this alone or just have a big appetite, you may want to consider doubling up the recipe.

Ingredients
- 2 tbsp Butter
- 1 Garlic Clove
- 3 Cups Cauliflower Rice
- 1/2 Cup Heavy Whipping Cream
- 1/2 Cup Grated Parmesan
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1/8 tsp Nutmeg
- Sprinkle of Shredded Parmesan (Optional)
Directions
1) Gather all the ingredients.
2) Grate garlic with a grater or mince and set aside.
3) Melt butter in a large skillet over medium heat.
4) Once butter is melted, stir in cauliflower and cook until tender, approximately 3 minutes.
5) Stir in heavy cream, Parmesan cheese, grated garlic, salt, black pepper and nutmeg. Cook for 3-5 minutes until cheese is melted through.
6) Top with shredded Parmesan cheese and serve hot!

Ingredients
- 2 tbsp Butter
- 1 Clove Garlic
- 3 Cups Cauliflower Rice
- 1/2 Cup Heavy Whipping Cream
- 1/2 Cup Grated Parmesan
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1/8 tsp Nutmeg
- 1/8 tsp Shredded Parmesan Optional
Instructions
- Gather all the ingredients.
- Grate garlic with a grater or mince and set aside.
- Melt butter in a large skillet over medium heat.
- Once butter is melted, stir in cauliflower and cook until tender, approximately 3 minutes.
- Stir in heavy cream, Parmesan cheese, grated garlic, salt, black pepper and nutmeg. Cook 3-5 minutes.
- Top with shredded Parmesan cheese and serve hot!
