Keto Low Carb Chicken Mushroom Risotto

For all you risotto lovers out there, this keto low carb chicken mushroom risotto is for you!  It’s cheesy, creamy and satisfies all your risotto cravings!

This is our third risotto recipe on our blog (lobster risotto and cheese risotto) so naturally, you can assume we love risotto.  And that we do!

However, it’s hard to satisfy those risotto cravings when you are limited to a certain amount of carbs a day.

That’s why we came up with low carb friendly risotto recipes that hopefully can satisfy those carby cravings!

This keto low carb chicken mushroom risotto recipe came about simply because we were looking for something to make for dinner and used what we had in the refrigerator.

Plus, when does chicken and mushrooms ever not make a good dish?

When we first started making risotto, we found that cauliflower rice surprisingly enough made a great rice substitute when mixed with cream and cheese.

I think you will be pleasantly surprised at how the cauliflower rice combines with the parmesan cheese and cream creating a delicious and satisfying meal.

This dish is very rich and creamy and therefore very filling.  It makes about two small servings on risotto approximately one and a half cups each.  So if you are feeding a bunch of hungry hippos, you might want to double or triple up the recipe!

Lastly, this dish is very easy to whip up so don’t be intimidated.  I’m sure many of you are thinking, ‘I’ve never made a traditional risotto let alone a low carb one’

But trust me when I say as simple as a dish can get.  If you can stir fry a few ingredients together, you can definitely achieve this recipe!  All that and each serving comes in at ~5g net carb making it an great low-carb/keto option for you!

For this recipe, all the ingredients should be available at your local  supermarket.

Ingredients

  • 2 tbsp Butter
  • 1 Garlic Clove
  • 3oz Chicken Thigh (about 1 large chicken thigh)
  • 3 Common Mushrooms
  • 3 Cups Cauliflower Rice
  • 1/2 Cup Heavy Whipping Cream
  • 1/2 Cup Grated Parmesan
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • 1/8 tsp Nutmeg
  • Sprinkle of Shredded Parmesan (Optional)

Directions

1) Gather all the ingredients.

2) Grate garlic with a grater or mince and set aside.

3) Thinly slice mushrooms and set aside.

4) Chop chicken into cubes (about 1/4 x 1/4 inch) and set aside.

5) Melt butter in a large skillet over medium heat.

6) Add garlic, cubed chicken, mushrooms and for 2-3 minutes until chicken is slightly browned.

7) Stir in cauliflower and cook until tender, approximately 3 minutes.

8) Stir in heavy cream, Parmesan cheese, salt, black pepper and nutmeg.  Cook for 3-4 minutes until cheese is melted and infused into the mix.

9) Top with shredded Parmesan cheese and serve hot!
