Coconut Coffee Smoothie

If you’re a coffee and coconut lover, then this Coconut Coffee Smoothie might just be for you! A refreshing drink and a perfect afternoon pick-me-up, this energizing smoothie is delicious and easy to make.

Inspired by Vietnam and its Vietnamese coffee which often uses coconut milk or cream to make Vietnamese coconut coffee, this smoothie version is just as good as the original.

As always, I like to keep my recipes as simple as possible, and with that in mind, I was able to create this delicious coconut milk coffee smoothie using unsweetened coconut milk, Monkfruit Erythritol Blend, ice, and an Instant Coffee pour-over. Simple and easy!

What is Coconut Coffee Smoothie?

This blended beverage includes coffee with coconut milk, ice, and sweetener for a refreshing drink with a coffee pick-me-up.

When I created this drink, I kept in mind that not everyone has an espresso maker so I used instant coffee for the pour over. However, if you would rather make and use espresso, by all means, do so!

If you would like more coconut flavor, you can add a tablespoon of coconut cream to create a more intense flavor.

The best of both worlds, this coconut milk coffee smoothie has an aromatic coffee flavor, combined with a rich nutty coconut taste.

What ingredients do I need to make a coconut instant coffee smoothie?

  • Instant Coffee – high-quality instant coffee is preferred for the best taste. Can also use espresso, or cold brew coffee.
  • Hot Water – used with instant coffee.
  • Sweetener to keep this recipe sugar-free, we use a monkfruit erythritol blend. It is low carb, keto friendly, and has 0 calories. Feel free to use your preferred sweetener or regular cane sugar.
  • Coconut Milk – use refrigerated coconut milk from
  • Ice – if you prefer not to blend, you can make an iced coconut coffee drink as well by not blending.

How to make coconut coffee?

In a high-powered blender add coconut milk, sweetener, and ice. Blend until smooth. Pour into a tall serving glass and pour prepared room temperature coffee over the top and enjoy a perfect cup of this coconut instant coffee smoothie.

2) In a small mixing bowl, combine Instant Coffee and hot water. Mix with spoon until the coffee granules are dissolved and set aside.

3) Using a high power blender, mix in sweetener, coconut milk and ice cubes. Blend until liquid forms a smoothie consistency, about 30 seconds.

4) Pour the coconut smoothie mix into a cup of choice followed by coffee mix. Mix together when ready to enjoy!
