These coconut white chocolate clusters are the perfect healthy keto low carb super snack! They’re sweet, buttery and all so simple to make!
These delicious clusters were inspired by a bag of coconut clusters I bought from Costco for my kids. The ingredients in the coconut clusters were clean and healthy containing just coconut and a mix of different seeds, apart from the cane sugar.
One bite and I knew I had a make a low-carb/keto version to share with my friends here on LCA. Although it took a few tries, we eventually came up with our own version of coconut clusters that we love more than the original!
Our clusters contain many different ingredients that we have carefully chosen to make this a super snack, and of course low-carb/keto!
What are the benefits of Coconut?
1/2 cup of Unsweetened Shredded Coconut only contains 4 net carbs! It’s also rich in medium-chain triglycerides (MCT), which are a great energy source for your body especially for those that practice a ketogenic lifestyle.
What are the benefits of Pumpkin Seeds?
These are low in carbs and high in vitamins and minerals as zinc, potassium, manganese, and magnesium. Nutrients in Pumpkin Seeds have also shown to protect against type 2 diabetes. In fact, a study found that following a diet containing pumpkin and Flaxseeds showed it prevented diabetic complications.
What are the benefits of Flaxseeds?
Flaxseeds are a nutritional powerhouse! It’s high in fiber and a rich source of omega-3 fatty acids. It also contains an array of beneficial nutrients including soluble and insoluble fiber aiding in digestive health. Flaxseeds help with heart disease, cholesterol levels, diabetes, and menopausal symptoms.

They also contain a lot of fiber that can aid with weight loss and help with your digestive system. Two tablespoons of Chia Seeds, contain 8g of carbs and 8g of fiber totaling 0 net carbs. Ingredients
- 1 Cup Unsweetened Shredded Coconut
- 1/3 Cup Pumpkin Seeds
- 1/3 Cup Dry Roasted Almonds
- 1 tbsp Chia Seeds
- 2 tbsp Flaxseeds
- 2 tbsp Sugar Free Low Carb White Chocolate Chips (we use Choc Zero, apply code LOWCARBINGASIAN for 10% off)
Coating
- 2 tbsp Sweetener (Monkfruit Erythritol Blend, sugar or sweetener of choice)
- 2 tbsp Butter
- 1 tsp Heavy Cream
Directions
1) Gather all the ingredients.
2) Preheat oven to 300F.
3) In a medium mixing bowl, combine Unsweetened Shredded Coconut, Pumpkin Seeds, Dry Roasted Almonds, Chia Seeds, and Flaxseeds. Mix well and set aside.
4) In a small stove top pot, add sweetener, butter and heavy cream on medium-low heat. Stir until butter is fully melted and then remove from heat.
5) Pour the butter mixture from step 4) into the bowl from step 3). Mix ensuring all the seeds are evenly coated.
6) On a silicone baking mat or parchment paper, spread the clusters out so they form a single layer then transfer to the oven and bake for 8 minutes.
7) Once 8 minutes has passed, take out the silicone baking mat and sprinkle Low Carb Chocolate Chips on top. Place the tray back into the oven and bake for an additional 2 minutes.
8) Once 2 minutes have passed, remove the tray from the oven and let it cool for 10 minutes. Once cooled enough to touch, transfer to the freezer for 5 minutes.
9) After freezing, use a spatula to break clusters free. Enjoy!
