Keto Low Carb Green Cauliflower Rice

Cauliflower green rice is the best healthy keto low carb side to go with any meal!  It’s a super easy recipe with a mix of cauliflower rice blended with cilantro, spinach, jalapeño, garlic, and lime juice making this dish one that is bursting with amazing flavors and aromas!

I was first introduced to Mexican green rice while I was browsing videos on Youtube and I was immediately intrigued.  I saw all those delicious ingredients and knew I had to make this ‘green rice’, low-carb/keto of course!

Since we have had success using cauliflower as a rice substitute with our previous cauliflower rice recipes, we thought we would go ahead and try it again with this green rice.

The first thing I did was gather all the ingredients: cilantro, jalapeño, spinach, green onions, lime juice and garlic.  I added everything into the food processor and pulsed until everything was finely chopped.

Next, I heated the cauliflower over the stove and sprinkled chicken bullion to add extra flavor.

After the cauliflower was cooked to the desired tenderness, I added the cilantro mixture and continued sautéing for a few more minutes until well combined.

Super simple right? And let me tell you, the aroma that fills your house…so delectable!

This quick and easy green rice is good with just about anything!

Serve it with steak, chicken, fish, tofu, or even eat it by itself.  I promise you will be making this green rice over and over again!

For this one, all you need is Chicken Bullion Powder, which you can get on Amazon or just your local supermarket.

Ingredients

  • 3 Cups Cauliflower Rice
  • 1 tbsp Olive Oil
  • 1 tsp Chicken Bullion Powder
  • 1 Cup Cilantro
  • 1 Whole Jalapeno
  • 1 Cup Spinach
  • 1 Stalk Green Onion
  • 2 tsp Lime Juice
  • 2 Garlic Cloves

Directions

1) Gather all the ingredients.

2) Inside a food processor, add cilantro, jalapeno, spinach, green onion, lime juice, garlic cloves and pulse until well combined.

3) In a large Teflon fry pan, add olive oil and bring up to heat on medium.  Once the oil starts to lightly smoke, add in cauliflower rice and cook for 2-3 minutes or until preferred tenderness is attained.

4)  Sprinkle in the Chicken Bullion and mix in the green paste for step 2).  Transfer to a serving bowl and enjoy hot!
