All you low carb, keto seafood lovers are gonna love this seafood risotto! It’s rich, cheesy, seafood goodness and most importantly, this recipe doesn’t use any rice!

We have definitely been on a risotto kick lately with our lobster risotto, chicken and mushroom risotto and our cheese risotto.  We just can’t get enough and the creative juices just keep flowing.

I’m personally a big seafood lover! I haven’t met a seafood I didn’t like.  So it’s only natural I would include a seafood risotto to our collection.

Making this dish is simple and we have made it even more simpler by using frozen seafood mix that you can find at most grocery stores.

This way, you don’t have to go and buy all of them separately which would probably cost you a fortune and also leave you with a lot of leftovers.

This dish is very rich, as are most risotto dishes and therefore very filling.  I think you will be pleasantly surprised at how the cauliflower rice combines with the parmesan cheese and cream creating a delicious and satisfying meal.

Have it with a side salad and it’s the perfect seafood dish to enjoy with a glass of your favorite sauvignon blanc!

I’m sure when you try this recipe, you will be blown away at how cauliflower makes the perfect rice substitute for this low carb risotto.

Even family members couldn’t tell the difference and some actually prefer it to regular rice!

Even if you don’t follow a low-carb/keto diet, let’s get real, cauliflower is a much much healthier option than white rice so when given the choice, why not pick healthy right?

For this recipe, all the ingredients should be available at your local  supermarket.

Ingredients

  • 2 tbsp Butter
  • 1 Garlic Clove
  • 1 Cup Seafood Mix
  • 1/4 Cup White Wine
  • 3 Cups Cauliflower Rice
  • 1/2 Cup Heavy Whipping Cream
  • 1/2 Cup Grated Parmesan
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • 1/8 tsp Nutmeg

Directions

1) Gather all the ingredients.

2) Grate garlic with a grater or mince and set aside.

3) In a Teflon frying pan, add frozen seafood mix and white wine.  Cook for 3-5 minutes on high heat until most of the liquid has evaporated.  Transfer to holding bowl once done.

4) Using the same Teflon frying pan, melt butter over medium heat.  Once the butter is melted, stir in cauliflower and cook until tender, approximately 3 minutes.

5) After 3 minutes, stir in heavy cream, Parmesan cheese, salt, black pepper, grated garlic, nutmeg and cooked seafood mix.  Cook for 3-4 minutes until cheese is melted and mixed in thoroughly.

6) Transfer to a serving bowl and serve hot!
