Keto Crepes

A keto low carb crepe? Yes you read that right!

So I made Keto Nutella last week and realized I have nothing to eat it with.  Of course, I could just spoon it my mouth and I’d be very happy (no judging!), but I also do love a good Nutella crepe!

So that’s why I decided to go the distance and create this low-carb/keto crepes recipe!

This crepe recipe is a little different than regular crepes in that it doesn’t have the chewy doughy texture, but that comes with the territory when using Almond Flour.

Almond Flour does not bake like regular flour, but it’s a great alternative if you’re low-carb/keto!

Nevertheless, they work great with our Keto Nutella or even with our Fruit Sauces!  These crepes are versatile enough that it would compliment almost anything you choose.

All while being low-carb/keto friendly with ~2g of carb/serving, so not too bad to satisfy those dessert cravings!

I have to be honest, I’m not a professional crepe maker and I’m probably only as good as the next mom in her kitchen when trying to make crepes perfectly round and thin.

But, that’s ok and the more practice swirling that batter around, the better you will get.

What really matters is getting those delicious crepes into your mouth and the mouth of your loved ones!

For this dish, the only special ingredients you would need are Almond Flour and Swerve/Monkfruit.  You can pick up everything up on Amazon or a local supermarket.

Now, let’s get cooking!

Servings 3-4 Crepes

Ingredients

Directions

1) Gather all the ingredients.

2) Put cream cheese in a microwavable bowl and microwave for approximately 20 seconds or until smooth and creamy when stirred.

3) Mix in room temperature eggs.  Note – For quick room temperature eggs, submerge egg in warm water for 3-5 min.

4) Stir in Swerve/Monkfruit and vanilla extract.

5) Add Almond Flour and combine well.

6) Lastly, add water and give it a really good whisking until everything is very well combined. To make a really smooth batter you can also use a hand mixer or a blender.

7) In a well-greased pan (I use cooking spray), heat on low and add enough batter to make a thin crepe while swirling the pan around.  Cook on low heat for approx 2-3 minutes or until edges slightly brown.

8) Flip over and cook for 1 minute and carefully transfer to a plate.

9) Fill with Keto Nutella or your choice of filling.
