  • Coconut Milk – (or milk of choice) you can also use coconut water which will give you a light piña colada.
  • Pineapples – frozen pineapples work best to keep the cocktail from getting watered down. Can also use canned pineapples while adding a little of the pineapple juices. The juice from the canned pineapple will give the drink extra flavor. Keep in mind though pineapples are not low in carbs. So try to limit the amount you add in.
  • Heavy Whipping Cream – can also use coconut cream for more coconut flavors. 2 tbsp
  • Sweetener – monkfruit erythritol blend or sweetener of choice. Adjust sweetness to your liking.
  • White Rum (optional) – white Bacardim, Malibu rum, or your preferred type of white rum.

Add all ingredients into a high-speed blender and blend until smooth. Top with optional whipped cream and a cherry garnish.
