Sesame Chicken Stir Fry


Sometimes, I have no idea what I am doing in the kitchen (scary thought that we run this website isn’t it?).  I mean I have no plan and just find inspiration by looking inside our fridge, you know, ‘work with what you have’.

So today was one of those days and all we had was chicken thighs and a couple of vegetables. 

So I started thinking what would go well together and came up with this Keto Sesame Chicken Stir Fry!  It came out really well so wanted to share our creation!

This dish is low-carb/keto approved with 1g of carb/serving. The dish is pretty light with hints of sweet garlic & sesame followed by a little kick of jalapeno on the finish.

For this dish, the only special ingredients you would need are Sesame Oil and Ttoasted Sesame Seeds. Both can be picked up on Amazon or a local Asian supermarket.

Ingredients

  • 4 Boneless and Skinless Chicken Thighs
  • 1/4 Onion
  • 1 Garlic Clove
  • 4-5 Thin Slices of Jalapeno
  • 1/2 Stalk of Green Onion
  • 1/2 tbsp Butter
  • 1 tsp Sesame Oil
  • 1/8 tsp of Salt
  • 1/8 tsp of Black Pepper
  • Sprinkle of Toasted Sesame Seed (optional)

Directions

1) Gather all the ingredients.

2) Thinly slice onions and set aside.

3) Thinly slice green onions and set aside.

4) Thinly slice garlic and set aside.

5) Thinly slice jalapeno, remove seeds and set aside.

6) Cut chicken into small bite-size pieces, about 1/2 x 1/2 inch. Set aside.

7) In a wok or deep fry pan, add butter and garlic on medium heat until melted.  Once melted, turn up the heat to high and add chicken inside.  Sprinkle salt and pepper and keep stirring and mixing until chicken is cooked, about 3-5 minutes.

8) Once the chicken is cooked, add onions and Sesame Oil while stirring.  Cook for an additional minute.

9) After a minute, remove from heat and mix in green onions and jalapenos.  Serve onto a plate and sprinkle Toasted Sesame Seed.
