I love chips.  I love dips.  But aiming to be low carb/keto, it was something that we had to replace.  So our go-to snack became pork rinds with sour cream.  As I was eating this combination the other day, I wondered what would happen if we gave this combination a little more flavor – after all, sour cream and onion is very popular for a reason.  I began to write down all the possible ingredients that would bring this to life and boy did we create something with life.  This sour cream garlic & onion is a CrackDip that you will not stop eating.  This goes very well with pork rinds (unflavored), but it really can be used for anything really.

This dish is keto friendly with ~3-5g of carbs per serving.  Since this is a dip, the serving sizes will vary on the individual.  Tasting notes are an initial pop of sour cream followed by an explosion of sweet caramelized onions and garlicky goodness to a creamy finish.

For this dish, the only special ingredients you would need is Kewpie mayo, which you can pick up on Amazon or a local Asian supermarket.  Also, if you have a food processor, it will cut the prep time down to pretty much nothing.

Net Carb/Serv ~3-5g

Servings 4-6 (about 1.5 cups of dip)

Ingredients

  • 1 Cup Diced Onion (about 1/4 of a large onion)
  • 2 tbsp Olive Oil
  • 1 tbsp Butter
  • Sprinkle of Salt
  • 1 Cup Sour Cream
  • 2 Garlic Cloves
  • 4 tbsp Kewpie Mayo
  • 1 Stalk Green Onions
  • Pork Rinds (optional)

Directions

1) Gather all the ingredients.

2) Finely dice onions.  You should end up with around 1 cup of loosely chopped onions.  Note – if you have a food processor, use it on this step.

3) In a medium Teflon fry pan, add olive oil and chopped onions.   Cook on medium-low for 30 seconds.

4) After 30 seconds has passed, add butter and lower heat to low.  Sprinkle salt and mix together.  Cook for 15 minutes to caramelize onions mixing occasionally.

5) In the meantime, finely chop garlic and set aside.  Note – if you have a food processor, use it on this step but do not combine with step 6).

6) Finely chop green onion and set aside.  Note – if you have a food processor, use it on this step.

7) After 15 minutes has passed, combine garlic into a medium Teflon fry pan with caramelized onion.  Stir well and cook for 5 more minutes.

8) After 5 minutes, transfer caramelized garlic onion to a bowl and place inside a freezer for 5 minutes (to cool-down).

9) After 5 minutes, in a large mixing bowl, combine sour cream, Kewpie mayo, green onions, caramelized onion mix and mix well.  Transfer to serving bowl.

10) Serve with optional pork rinds or vegetable sticks of your choice.
