This strawberry smoothie is made up of almond milk, cottage cheese, frozen strawberries, vanilla extract and a little sweetener to sweeten things up a bit.  All you have to do is throw it all in a blender and it’s ready to go!

What ingredients do I need and how do you make strawberry cheesecake smoothie?

Smoothie

  • Almond Milk – or milk of choice.
  • Strawberry – frozen is preferred.
  • Cottage Cheese – can use low fat or full fat. Can sub with plain greek yogurt but will lack the cheese flavor.
  • Sweetener – monkfruit erythritol blend, sugar or sweetener of choice.
  • Vanilla Extract – made from vanilla bean pods and found in most supermarkets.

Optional Cheesecake Crumble Topping

  • Almond Flour – finely sifted and blanched works best.
  • Butter – use unsalted.

Add all ingredients to a blender and blend until smooth.  Garnish with a fresh strawberry.

Optional Cheesecake Crumble Topping

Directions

1) Gather all the ingredients.

2) If making the optional cheesecake crumble topping, preheat oven to 350F.  Otherwise, skip to step 5)

3) In a small mixing bowl, combine Almond Flour, sweetener, and melted butter (melted in the microwave). Using a fork, blend well until combined and crumbly.

4) Spread crust mixture onto a silicone baking mat or parchment paper and flatten to approximately 1/4 inch thickness.  Bake for 12-15 minutes until browned.  Once completely cooled, use your fingers to break apart into smaller pieces and set aside.

5) In a high powered blender, add Almond Milk, frozen strawberries, cottage cheese, sweetener, Vanilla Extract, and ice.  Blend on high until smooth.

6) Transfer smoothie to a serving glass and top with optional cheesecake crumble topping.  Enjoy!

  1. Just made this and it was so good! My toddler enjoyed it too!
    I didn’t have almond flour, so I didn’t make the crumble topping – but definitely going to have to try that next time! I also added a little more almond milk (to finish the bottle) and a scoop of collagen peptides. Will definitely make agin!
