Ingredients
Smoothie
- 1/2 Cup Almond Milk (or milk of choice)
- 1/3 Cup Frozen Strawberry
- 1/4 Cup Cottage Cheese
- 2 tbsp Sweetener (sugar alternative, sugar or preferred sweetener)
- 1/2 tsp Vanilla Extract
- 1/2 Cup Ice
Optional Cheesecake Crumble Topping
- 2 tbsp Almond Flour
- 1 tsp Sweetener (sugar alternative, sugar or preferred sweetener)
- 1 tsp Butter
Directions
1) Gather all the ingredients.
2) If making the optional cheesecake crumble topping, preheat oven to 350F. Otherwise, skip to step 5)
3) In a small mixing bowl, combine Almond Flour, sweetener, and melted butter (melted in the microwave). Using a fork, blend well until combined and crumbly.
4) Spread crust mixture onto a silicone baking mat or parchment paper and flatten to approximately 1/4 inch thickness. Bake for 12-15 minutes until browned. Once completely cooled, use your fingers to break apart into smaller pieces and set aside.
5) In a high powered blender, add Almond Milk, frozen strawberries, cottage cheese, sweetener, Vanilla Extract, and ice. Blend on high until smooth.
6) Transfer smoothie to a serving glass and top with optional cheesecake crumble topping. Enjoy!

Just made this and it was so good! My toddler enjoyed it too!
I didn’t have almond flour, so I didn’t make the crumble topping – but definitely going to have to try that next time! I also added a little more almond milk (to finish the bottle) and a scoop of collagen peptides. Will definitely make agin!
