Sweet Chili Chicken Panda Express Copycat

This low carb Panda Express version is just as delicious as the original but much healthier. It also whips up quickly, and uses a sweet chili sauce that is sugar-free, and reheats nicely which makes it a great choice for meal prep!

Our version of sweet chili sauce with chicken is a low carb take of Panda Express’s sweet chili chicken made with breaded chicken, bell peppers, green onions, and toasted sesame seeds.

This low carb Panda Express version rivals the original with a sugar-free chili garlic sauce glaze while being much healthier.

Sweet chili sauce from Panda Express is sweet and tangy, complementing chicken very well. It adds a very addicting quality to the dish.

The sauce is also great in seafood, beef and other proteins.

Our version of Panda Express sweet chili sauce is a combination of water, sweetener, sriracha, ketchup, garlic powder and xanthan gum.

The ingredients are cooked over the stove until thick.

You can use Panda Express sweet chili sauce on a variety of dishes. It goes well especially with different proteins such as fish, chicken, beef, seafood, and veggies. Can be used as a sauce to mix into stir fry or just as a dipping sauce.

What ingredients do I need and how to make Panda Express sweet chili chicken?

Chicken

  • Chicken Breast – skinless and boneless.
  • Almond Flour – a low carb and keto friendly flour alternative. Or use flour of choice.
  • Parmesan Cheese – grated.
  • Eggs – beaten well.
  • Sparkling Water – club soda, soda water, carbonated water.
  • Deep Frying Oil – use preferred frying oil.
  • Bell Peppers – sliced, about 1/2 of a bell pepper.
  • Green Onions – chopped.
  • Toasted Sesame Seeds (optional) – used for garnish.

Sauce 

  • Sweetener – monkfruit erythritol blend, sugar or sweetener of choice.
  • Sriracha – an Asian chili sauce. Can be purchased at most supermarkets.
  • Ketchup – use sugar-free ketchup is preferred.
  • Garlic Powder – granulated or finely ground.
  • Xanthan Gum – a low carb and keto friendly thickener and starch alternative. Use your preferred thickener of choice.

Coat chicken pieces in batter and fry until fully cooked. Heat a large pan and cook bell pepper until tender and add fried chicken pieces. Pour in sweet chili sauce and toss until well combined. Transfer to serving dish and sprinkle with sesame seeds.

Ingredients

Chicken

  • 1 lbs Boneless & Skinless Chicken Breast
  • 1/2 Cup Almond Flour (or flour of choice)
  • 2 tbsp Grated Parmesan Cheese
  • 2 Whole Eggs
  • 1/3 Cup Sparkling Water
  • 2-3 Cups Neutral Deep Frying Oil

Stir Fry

  • 1 tbsp Neutral High Temp Cooking Oil
  • 1/3 Cup Sliced Bell Peppers (about 1/2 of a bell pepper)
  • 1 Stalk Green Onions
  • 1/2 tsp Toasted Sesame Seeds (optional)

Sauce

Directions

1) Gather all the ingredients.

2) Chop chicken breast into bite size cubes as shown below and set aside.

3) Chop green onions, slice bell peppers as shown below and set aside.

4) In a stove top pot, make the sauce by adding in water, sweetener, Sriracha, Sugar Free Ketchup and garlic powder.  Bring to a soft boil, mix in Xanthan Gum and then remove from heat.  Continue to mix until Xanthan Gum is completely dissolved and set aside.

5) Prepare batter by combining Almond Flour, grated Parmesan cheese, eggs and Sparkling Water.  Use a hand/stand mixer to mix (you can hand whisk, but the batter won’t be as airy).  Note – batter may be slightly runny depending on the brand or type of flour used.  If this is the case, add more flour, a tsp at a time until desired batter consistency is reached.

6) Transfer the bite size chicken into the batter, mix well ensuring an even coat, and transfer to a holding plate.

7) Pour enough cooking oil to cover the chicken into a fry pan of choice (we use a cast iron pan) and heat oil up to 375F (if you don’t have a thermometer, just wait until the oil starts to lightly smoke, about 3-5 minutes).  Note – it’s very important for the oil to be up to temp, otherwise, the batter will come off.

8) Once up to heat, reduce heat to medium, carefully add coated chicken and cook for 1-2 minutes per side or until golden brown.  Once done, transfer the chicken to a drying rack.  Note – do not overcrowd when deep frying, otherwise the temp will drop and will not fry correctly.

9) In a large Teflon frying pan or Wok, add neutral cooking oil and bring up to temp on high heat.  Once up to temp, add in sliced bell peppers and cook for 1-2 minutes or until desired tenderness is reached.

10) Next add in fried chicken, chopped green onions and pour sauce from step 4).  Mix well until coated and transfer to a serving plate.  Top with Toasted Sesame Seeds and enjoy hot!
