Keto Sweet Chili Chicken

Breaded chicken breast, bell peppers, green onions and toasted sesame seeds tossed in a sweet chili sauce.  This healthy keto copycat version inspired by Panda Express is delicious and tastier than the original!

Although Panda Express is technically fast food and not exactly low carb, my family loves to get it occasionally on busy weekday nights when the Chinese food craving hits.

I usually try to stick to the less carby dishes, but on occasion, I will have a few bites of different menu items.

On our last trip, my family tried the sweet chili chicken and was quickly a favorite among my kids! It was sweet, tangy, a little spicy and packed with flavor.

This keto low carb version is just as delicious as the original but much healthier. It also whips up quickly, is sugar-free, and reheats nicely which makes it a great choice for meal prep!

Our version of sweet chili chicken is a keto and low carb take of Panda Express’s sweet chili chicken made with breaded chicken, bell peppers, green onions, and toasted sesame seeds tossed in a sweet chili sauce.

This sweet chili sauce is made with keto friendly ingredients including monk fruit, sriracha, sugar-free ketchup, garlic powder, and xanthan gum.

You can also add different vegetables such as onions, celery, squash, broccoli, pepper, etc.

Do you have any other tips to make this sweet chili chicken recipe?

  • Make sure the oil is at least 375 F before frying otherwise you may have issues with the batter not sticking to the chicken.
  • Don’t overcrowd the pan when deep frying.
  • You might want to consider making extra sweet and chili sauce and holding it in reserve in case you want more sauce.
  • Make sure the sauce is warm before mixing in the xanthan gum, otherwise it might be difficult to get it to dissolve.
  • Mix batter right before frying as it will thicken if left out.
  • If you need to reheat the dish, throw it in a microwave for 30-40 seconds.

Ingredients

Chicken

  • 1 lbs Boneless & Skinless Chicken Breast
  • 1/2 Cup Almond Flour
  • 2 tbsp Grated Parmesan Cheese
  • 2 Whole Eggs
  • 1/3 Cup Sparkling Water
  • 2-3 Cups Neutral Deep Frying Oil

Stir Fry

  • 1 tbsp Neutral High Temp Cooking Oil
  • 1/3 Cup Sliced Bell Peppers (about 1/2 of a bell pepper)
  • 1 Stalk Green Onions
  • 1/2 tsp Toasted Sesame Seeds (optional)

Sauce

Directions

1) Gather all the ingredients.

2) Chop chicken breast into bite size cubes as shown below and set aside.

3) Chop green onions, slice bell peppers as shown below and set aside.

4) In a stove top pot, make the sauce by adding in water, Monkfruit Erythritol Blend, Sriracha, Sugar Free Ketchup and garlic powder.  Bring to a soft boil, mix in Xanthan Gum and then remove from heat.  Continue to mix until Xanthan Gum is completely dissolved and set aside.

5) Prepare batter by combining Almond Flour, grated Parmesan cheese, eggs and Sparkling Water.  Use a hand/stand mixer to mix (you can hand whisk, but the batter won’t be as airy).  Note – batter may be slightly runny depending on the brand of Almond Flour used.  If this is the case, add more Almond Flour a tsp at a time until desired consistency is reached.

6) Transfer the bite size chicken into the batter, mix well ensuring an even coat, and transfer to a holding plate.

7) Pour enough cooking oil to cover the chicken into a fry pan of choice (we use a cast iron pan) and heat oil up to 375F (if you don’t have a thermometer, just wait until the oil starts to lightly smoke, about 3-5 minutes).  Note – it’s very important for the oil to be up to temp, otherwise, the batter will come off.

8) Once up to heat, reduce heat to medium, carefully add coated chicken and cook for 1-2 minutes per side or until golden brown.  Once done, transfer the chicken to a drying rack.  Note – do not overcrowd when deep frying, otherwise the temp will drop and will not fry correctly.

9) In a large Teflon frying pan or Wok, add neutral cooking oil and bring up to temp on high heat.  Once up to temp, add in sliced bell peppers and cook for 1-2 minutes or until desired tenderness is reached.

10) Next add in fried chicken, chopped green onions and pour sauce from step 4).  Mix well until coated and transfer to a serving plate.  Top with Toasted Sesame Seeds and enjoy hot!
