Lemon Pepper Shrimp Cauliflower Fried Rice

Shrimp and lemon pepper is such a perfect combination.  When you mix it with cauliflower rice and make it a shrimp cauliflower fried rice, it’s an even more amazing meal!

This lemon pepper shrimp cauliflower fried rice is bursting with savory shrimp flavors while also having a tangy spicy kick from a mix of chili and cayenne pepper.

It’s also really easy to put together.  We start with a basic garlic shrimp pan fried sautéed with oil then move onto heating up the cauliflower rice.

Once that’s done, it simple as adding all the various seasoning and mixing it all together!

It’s great for an easy low carb meal any day of the week!

Pan-fried garlicky shrimp is tossed with cauliflower rice and then seasoned with lemon pepper, chili powder, lemon juice and topped with green onion.

What’s lemon pepper?

Lemon pepper is a seasoning made from granulated peppercorns and lemon zest.  You can find it in most grocery stores and supermarkets.

What’s cauliflower rice and where do I get it?

Cauliflower rice is a grain-free alternative to regular white rice made entirely out of cauliflower.  You can find it fresh or frozen at most groceries stores.

Ingredients

  • 1/2 lbs Peeled Shrimp
  • 2 Cloves Garlic
  • 1 tbsp Neutral Cooking Oil
  • 1 tbsp Butter
  • 2 Cups Cauliflower Rice (or rice of choice)
  • 1/2 tsp Lemon Pepper
  • 1/2 tsp Chili Powder
  • 1/8 tsp Cayenne Pepper
  • 1/4 tsp Lemon Juice (1 wedge of lemon)
  • 1 Stalk Green Onion

Directions

1) Gather all the ingredients.

2) Prepare shrimp by deveining, peeling, drying off any liquid with a paper towel. Cut shrimp into 1/2 inch pieces as shown below.

3) Mince garlic and chop green onions as shown below.

4) In a Teflon frying pan or Wok, add 1 tbsp of neutral cooking oil and minced garlic on medium heat. Once the garlic becomes fragrant, about 20-30 seconds, add in chopped shrimp. Cook for 1-2 minutes until pink throughout. Remove from heat and transfer to holding bowl.

5) In a large Teflon fry pan, add frozen cauliflower rice and cook for 2-3 minutes or until preferred tenderness is attained. Add butter and mix until melted.

6) Add back in the cooked shrimp from step 4), mix in Lemon Pepper, Chili Powder and Cayenne Pepper. Cook for an additional 45-60 seconds, then remove from heat and squeeze in lemon juice and chopped green onions. Transfer to a serving bowl and enjoy hot!
