Low Carb Chicken Cheese Quesadilla

This isn’t so much a recipe as much as it is a hack.  There’s no cooking and no mixing involved.  You don’t even have to turn on the stove.  However, it’s easy, quick, and taste delicious!

Often times during the week, I’m running the kids around so much that I don’t have a lot of time to make lunch.  So this chicken quesadilla is my go-to for a quick and healthy low-carb bite before I have to head out the door again.  A bonus is that my kids love it too and it’s loaded with healthy fats from the avocado so I know they are getting a balanced meal.  I hope this recipe will be as much as a lifesaver for you as it has been for me.

This is a low carb recipe, ~10g carb.  For fewer carbs, use half the tortilla, cheese, sour cream and add more chicken to get below the 5g threshold per meal for keto.

Note: I use Costco Rotisserie chicken for this recipe but you can use any store-bought rotisserie chicken.  You can find low-carb tortillas in most major chain supermarkets.

Ingredients

  • 1 Low Carb Tortilla
  • Rotisserie Chicken Pieces
  • 1/2 cup Mexican 50/50 Blend Shredded Cheese
  • 1/2 Avocado Sliced
  • Salt and Black Pepper to Taste
  • 1 tbsp Sour Cream

Directions

1) Gather all the ingredients.

2) Take leg or breast meat from whole rotisserie chicken and cut into small cubes.  Set aside

3) Cut half of an avocado, peel and slice. Set aside

4) Place tortilla on a plate and sprinkle 1/4 cup of cheese on half of the tortilla.

5) Layer chicken over the cheese.

6) Place avocado on top of the chicken.

7) Sprinkle the remaining 1/4 cup of cheese on top of avocado.

8) Salt and Pepper to taste

9) Fold tortilla over and microwave for approximately 1 minute.  I like to put a small plate on top of the tortilla to press it down while heating.

10) Top with sour cream or your choice of topping.
