Low Carb Chicken Cheese Quesadilla


Here’s our to-go lunch dish when we’re short on time and ironically, making other recipes for LCA – Low Carb Chicken Cheese Quesadilla!  That’s right, this quick and easy dish requires no cooking, no mixing, and only a microwave!

But don’t let the quick and easy part fool you, it’s really good and has plenty of flavors to satisfy your lunch cravings!

A bonus is that my kids love this dish too and since it’s loaded with healthy fats from the avocado, I know they’re getting a balanced meal with. 

It’s really easy to make and we start by shredding up some rotisserie chicken.  From there, we just sprinkle some cheese onto low carb tortillas (we just use the mission brand), followed by the rotisserie chicken, some avocados and another sprinkle of cheese.  Then off it goes to the microwave for a minute and topped with some Kewpie mayo!

Easy as that and I hope this recipe will be as much as a lifesaver for you as it has been for me!

This dish comes in around ~10g of net carbs per serving, so it might not be for everyone’s low-carb/keto regiment.  If you’re interested in cutting down the carbs, you can use half the tortilla and more chicken and avocados.  That’ll reduce the net carbs quite a bit while still keeping you nice and full!

I use Costco Rotisserie chicken for this recipe but you can use any store-bought rotisserie chicken.  You can find low-carb tortillas in most major chain supermarkets.

Ingredients

  • 1 Low Carb Tortilla
  • 1/4 lbs Rotisserie Chicken
  • 1/2 Cup Mexican Blend Shredded Cheese
  • 1/2 Whole Avocado
  • 1/8 tsp Salt
  • 1/8 tsp Black Pepper
  • 1 tbsp Kewpie Mayo (you can sub with American mayo but will alter taste)

Directions

1) Gather all the ingredients.

2) Shred off leg or breast meat from rotisserie chicken and set aside.

3) Cut avocado slices and set aside.  Here is how we cut our avocados.

4) Place tortilla on a plate and sprinkle 1/4 cup of cheese on half of the tortilla followed by shredded chicken.  Place avocado on top of the chicken.  Sprinkle the remaining 1/4 cup of cheese on top of avocado and sprinkle on some salt and black pepper.  Fold tortilla over and microwave for approximately 1 minute.

5) Top with Kewpie Mayo.
