What kind of chicken should I use for this pan seared chicken recipe?

I recommend chicken thigh because it’s softer and juicer, but if you prefer breast meat, by all means, you can use that too!

What kind of cooking oil do you recommend using for pan searing?

I like to use sunflower oil, peanut oil and safflower oil.  But you can use any type of high temp natural cooking oil you prefer.

How spicy is this spicy garlic pan seared chicken recipe?

On a scale of 1 to 10, it’s about a 4.  So if you like extra spiciness, you can always kick up the cayenne pepper.  Just increase in moderation as cayenne pepper is pretty spicy.

Why do you cook the garlic and chicken separately?

We do this so that the garlic has a crispy texture and gives the dish a garlicky crunch.

For this recipe, the special ingredient you would need is the optional Toasted Sesame Seeds, which you should be able to pick up at your local supermarket or on Amazon!

Ingredients

Chicken

  • 1/2 lb Boneless and Skinless Chicken Thigh (about 2-3 pieces)
  • 1 tbsp High Temp Neutral Cooking Oil
  • 3/8 tsp Salt (about 75% of 1/2 tsp)
  • 1/4 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Toasted Sesame Seeds (optional)
  • 1 Stalk Green Onions

Fried Garlic

  • 3 Garlic Clove
  • 1/2 tbsp High Temp Neutral Cooking Oil

Directions

1) Gather all the ingredients.

2) Mince garlic and set aside.

3) Chop green onions and set aside.

4) Cut chicken into bite-size cubes and add it into a mixing bowl.

5) In another small mixing bowl, mix together salt, black pepper, garlic powder, cayenne pepper and then toss seasoning into the chicken.

6) In a large Teflon fry pan, add 1/2 tbsp of cooking oil and minced garlic on medium heat.  Cook the garlic until light golden brown, which will take about 90-120 seconds.  Once done, use a slotted spatula to remove only the garlic and set aside.

7) Using the same Teflon fry pan, add 1 tbsp of cooking oil and bring up to temp on high heat.  Once up to temp, reduce heat to medium-high, add in chicken and cook for 4-5 minutes while occasionally stirring or until chicken is browned.

8) Once the chicken is done, use a slotted spatula to transfer the chicken to a serving plate.  Sprinkle on crispy minced garlic, green onions and optional Toasted Sesame Seeds.  Enjoy hot!
