What is Green Sauce?
This cilantro jalapeno sauce is inspired by Peruvian food and the green sauce, or Aji Verde, that always comes on the side of their dishes.
It goes great on just about everything from steak to chicken to salads!
What’s the difference between other green sauces like Zhoug, Cilantro Lime, and Aji Verde?
In all honesty, these green sauces are all very much alike and contain very similar ingredients. The biggest difference is the base it’s built off of.
- Aji Verde – made with a mayo base and includes cilantro, jalapeño, lime, garlic and salt.
- Cilantro Lime – made with olive oil, and or yogurt and sour cream and includes cilantro, lime, garlic and salt.
- Zhoug – made with an olive oil base and includes cilantro, garlic, jalapeno, cardamon, and lemon juice.
This green sauce recipe is more similar to that of Aji Verde with the addition of cumin.
What ingredients and you need and how do you make cilantro jalapeno green sauce?
- Mayonnaise – use regular mayo such as Best Food/Hellman’s.
- Cilantro – trim off the end and use the whole bunch, stems leaves and all.
- Garlic – whole cloves, peeled. Add more garlic if you’re a garlic fan.
- Lime Juice – fresh squeezed is best.
- Cumin – a spice found in most supermarkets. Gives the green sauce a smokey flavor.
- Salt – use regular table salt or sea salt.
This recipe is incredibly easy to make. Throw everything into a food processor or blender, that’s it!
Can I adjust the green sauce spicy level to my liking?
If you prefer more spicy, you can add an extra jalapeno. If you prefer a less spicier version, you can de-seed the jalapeño which will bring down the spicy level. I would say this cilantro jalapeno green sauce is 5-6 in terms of spiciness.
What can I use this cilantro jalapeno green sauce for?
I kid you not when I say this green sauce goes with just about anything! I recommend trying it with steak, fish, chicken, ribs, eggs, tacos, salads, sandwiches vegetables cauliflower rice and anything else you can think of!
How long can this cilantro jalapeno green sauce be stored in the refrigerator?
This green sauce can be stored in the refrigerator up to 5 days. Make sure you keep it refrigerated since the base contains mayonnaise.
