Whenever we had a potluck family gathering growing up, my mom was sure to bring one of her three dishes – Garlic Pulled Chicken, Mom’s Cabbage Salad, or today’s recipe, Tomato Basil Mozzarella Bites.  The origin of this dish is actually Italian, but my mom always made a delicious version of it that happens to be low-carb/keto friendly!  It is super easy to prepare and the tomatoes are an excellent source of antioxidants and vitamin C & K!  Not to forget, the fresh mozzarella provides the low-carb/keto energy you need to keep your body rolling!  There is no cooking involved to make this recipe and just a few basic ingredients that should be available at your local supermarket!  So next time you are looking to change up your snack game, give this quick n easy low-carb/keto recipe a try!

This dish is low-carb/keto friendly at around ~0.5g of carb per slice.  These start with the soft welcoming texture of fresh mozzarella followed by juicy tomatoes and infused with flavors of salted pepper basil and olive oil.  My mom’s version also adds a touch of Soy Sauce to give it a little Asian flair!

For this dish, the only special ingredient you would need is Soy Sauce, which should be available at your local supermarket or on Amazon.

Servings 14-16 Slices

Ingredients

  • 2 Medium Tomatoes
  • 16 oz Fresh Mozzarella
  • 14-32 Fresh Basil Leaves
  • 1/8 tsp Salt
  • 1/8 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 1 tsp Soy Sauce

Directions

1) Gather all the ingredients.

2) In a small mixing bowl, combine salt, pepper, olive oil and soy sauce.  Set aside.

3) Thinly slice tomatoes and fresh mozzarella into 1/4″ thickness.  Set aside.

4) On a serving plate, lay down tomato slice followed by a slice of fresh mozzarella topped with basil leaves.  Keep chilled until ready to serve and drizzle dressing on top before serving!
