Trader Joe’s Low Carb Chili Lime Burger, Avocado, Eggs

Sometimes we are in such a rush that we cannot spend 30+ minutes cooking a meal and instead need to hastily slap something together.  This recipe (more of a combination of ideas) was derived from such circumstances.  Holding a baby in one hand, and having another telling me they are super hungry and requesting for food, I had to figure something out.  So I looked in our fridge and found eggs, avocado, and chili & lime chicken patties from Trader Joe’s.  I never tried the chicken patty, but it sounded like a good option.  So while doing the balancing act of holding a baby in one hand and cooking with the other, I put this meal together and presented it to my daughter.  She responded with “Papa, it’s yummy, thank you!”.  So after she was done, I tried some of her leftovers and was presently surprised by the taste and quality of carbs/protein/fat ratio.  So on a later date in a more controlled setting, I made it again so I would be able to share the recipe with everyone!

I would say this dish is low carb bordering keto.  Each serving comes out to 7.2g of net carbs, but it is a very full meal.  If you are really trying to limit carbs, you can just use half an avocado instead and that would bring it down to 5.2g.  For me, the fact you get 53g of protein and 43g of healthy fats is well worth it!  I would describe the chicken to taste exactly as the package says, chili & lime, with the real kicker being the salted soy sauce avocado!  My mom described this as the way they ate ‘sashimi’ before they could afford real sashimi!!

For this dish, there aren’t any special ingredients, so gathering everything should be easy.

Ingredients

Directions

1) Gather all the ingredients.

2) This step will depend on if your Trader Joe’s Chili & Lime Chicken Burger is thawed or not.  If thawed, proceed to step 3). If not thawed, place 2 patties (if you cannot break them apart, place all 4 patties) in a ziplock bag, release as much air as you can and seal.  In a large stainless mixing bowl, add warm-hot water.  Once stainless mixing bowl is filled with water, throw ziplock in there and it will hasten the thawing process without the use of a microwave (I prefer this method since our microwave tends to cook meat when defrosting.

3) Place eggs inside stove top pot and fill with enough water to completely submerge eggs.  Bring to boil.

4) Once boiling, cook eggs for 7 minutes and remove from heat.  Let it rest for 4 minutes inside stove top pot.

5) Peel avocado, slice longways and plate.  If you are inexperienced with avocado peeling, my preferred method is to cut it in half longways and twist until 1 side comes off (if the halves refuse to separate, that means the avocado isn’t ripe).  Take a knife and carefully hit seed with the knife. If done correctly, the seed should come out with resistance on the knife.  Discard the seed and get a spoon.  Spoon the outer bowl of the avocado along its edge and the avocado should fall out in 1 piece.  Here is a step by step on how we cut avocados.

6) Once Trader Joe’s Chili & Lime Chicken Burger is thawed, add olive oil onto Teflon frying pan on medium heat.  After about 90 seconds have passed, gently place Trader Joe’s Chili & Lime Chicken Burger onto frying and cook for 2-3 minutes or until browned.

7) After 2-3 minutes, flip and cook for another 2-3 until browned.

8) While waiting for the Trader Joe’s Chili & Lime Chicken Burger, your eggs should be done, so dump out the water and peel the eggs.  Once peeled, cut in half and plate.  If you are inexperienced with peeling eggs, a cool trick is to gently roll the eggs with your finger against a hard surface.  This will ‘crack’ the eggs all the way through so shell should come off very easily.  Here is a video showing this technique.

9) Once eggs are peeled, your burger should be ready.  If ready, plate.

10) Add a couple of drops of soy sauce and a sprinkle salt on avocado. Add sprinkle of Trader Joe’s Chili & Lime seasoning to the chicken burger (optional). A cool trick I learned to control drops of soy sauce (only works with dispenser) is to cover the one side of the dispenser with your thumb and gently shake the soy sauce out of the other side.
