Trader Joe’s Low Carb Chili Lime Burger, Avocado, Eggs

Sometimes we are in such a rush that we cannot spend 30+ minutes cooking a meal and instead need to hastily slap something together.

This recipe (more of a combination of ideas) was derived from such circumstances.  Holding a baby in one hand, and having another telling me they are super hungry and requesting for food, I had to figure something out!

So I looked in our fridge and found eggs, avocado, and chili & lime chicken patties from Trader Joe’s.  I’ve tried the chicken patty, but it sounded like a good option.

As I was doing the balancing act of holding a baby in one hand and cooking with the other, I put this meal together and presented it to my daughter.

She responded with “Papa, it’s yummy, thank you!”.  So after she was done, I tried some of her leftovers and was presently surprised by the taste and quality of carbs/protein/fat ratio.

So on a later date in a more controlled setting, I made it again so I’d be able to share the recipe with everyone!

Each serving comes out to ~5g of net carbs of chicken that tastes exactly as the package says, chili & lime, with the real kicker being the salted soy sauce avocado!  My mom described this as the way they ate ‘sashimi’ before they could afford real sashimi!!

1) Gather all the ingredients.

2) This step will depend on if your Trader Joe’s Chili & Lime Chicken Burger is thawed or not.  If thawed, proceed to step 3).  If not, place patties inside a ziplock and soak in warm water.

3) Make hard boiled eggs.  Here is how we make ours.  Transfer to a serving plate.

4) Cut and prepare avocados.  Here is a step by step on how we cut avocados.  Transfer to the serving plate.

5) Once Trader Joe’s Chili & Lime Chicken Burger is thawed, add olive oil onto Teflon frying pan on medium heat.  After about 90 seconds have passed, gently place Trader Joe’s Chili & Lime Chicken Burger onto frying and cook for 2-3 minutes or until browned.

6) After 2-3 minutes, flip and cook for another 2-3 until browned and transfer to serving plate.

7) Sprinkle Soy Sauce and salt on avocado.  Top with optional sprinkle of Trader Joe’s Chili & Lime seasoning on top of the chicken burger.
