Low Carb Chicken Cheese Quesadilla

- 1 Piece Low Carb Tortilla
- 1/4 lbs Rotisserie Chicken
- 1/2 Cup Mexican Blend Shredded Cheese
- 1/2 Whole Avocado
- 1/8 tsp Salt
- 1/8 tsp Black Pepper
- 1 tbsp Kewpie Mayo you can sub with American mayo but will alter taste
Gather all the ingredients.
Shred off leg or breast meat from rotisserie chicken and set aside.
Cut avocado slices and set aside. Here is how we cut our avocados.
Place tortilla on a plate and sprinkle 1/4 cup of cheese on half of the tortilla followed by shredded chicken. Place avocado on top of the chicken. Sprinkle the remaining 1/4 cup of cheese on top of avocado and sprinkle on some salt and black pepper. Fold tortilla over and microwave for approximately 1 minute.
Top with Kewpie Mayo.
