Gather all the ingredients.
Use a grater to grate ginger and add to a large mixing bowl.
Add Japanese sake into the large mixing bowl and mix well.
Place chicken wings inside a large mixing bowl and let it marinate for 15 minutes. Periodically rotate chicken to ensure all parts are getting marinated.
In the meantime, prepare oven tray by lining with aluminum foil and spraying with cooking oil.
Strain marinade from chicken wings and place on the oven tray. Remove any large pieces of ginger (small pieces will be ok).
Sprinkle salt and pepper on both sides. If you want a little heat, sprinkle some optional Togarashi as well.
Place oven on broil and rearrange rack to be around 6-8" from the heating element (on our oven, it is the 2nd slot from the top). Place the tray in the CENTER of the oven and broil chicken for 8-10 minutes or until browned. Note - if the chicken is browning too quickly, lower the tray to rack below.
Once browned, flip chicken and broil for additional 8-10 minutes or until browned.
Transfer to a serving plate and serve with optional lemon wedge.
