Ingredients

  • 1 Cup Diced Onion
  • 2 tbsp Olive Oil
  • 1 tbsp Butter
  • 1/8 tsp Salt
  • 1 Cup Sour Cream
  • 2 Cloves Garlic
  • 4 tbsp Kewpie Mayo
  • 1 Stalk Green Onions
  • 1 Cup Pork Rinds optional

Instructions

  • Gather all the ingredients.
  • Finely dice onions. You should end up with around 1 cup of loosely chopped onions. Note - if you have a food processor, use it on this step.
  • In a medium Teflon fry pan, add olive oil and chopped onions. Cook on medium-low for 30 seconds.
  • After 30 seconds has passed, add butter and lower heat to low. Sprinkle salt and mix together. Cook for 15 minutes to caramelize onions mixing occasionally.
  • In the meantime, finely chop garlic and set aside. Note - if you have a food processor, use it on this step but do not combine with step 6).
  • Finely chop green onion and set aside. Note - if you have a food processor, use it on this step.
  • After 15 minutes has passed, combine garlic into a medium Teflon fry pan with caramelized onion. Stir well and cook for 5 more minutes.
  • After 5 minutes, transfer caramelized garlic onion to a bowl and place inside a freezer for 5 minutes (to cool-down).
  • After 5 minutes, in a large mixing bowl, combine sour cream, Kewpie mayo, green onions, caramelized onion mix and mix well. Transfer to serving bowl.
  • Serve with optional pork rinds or vegetable sticks of your choice.
